Best Homemade Cream of Celery Cream Soup
So, what do you do with leftover celery, you make soup. I love this soup because of the potatoes, it keeps you full for a while so you do not get hungry so fast. Now about adding the sugar, well sometimes the celery you buy is a bit on the sour side. Adding the sweetener takes the bitter taste away. A little sugar is not going to make it sweet, so do not worry.

Ingredients
2 cups - Celery, chopped with some leaves
1/2 cup - Celery and leaves, finely chopped (extra)
2 tbsp - Butter, unsalted
2 med. - Potatoes, peeled
1 sm. - White onion, roughly chopped
2 cloves - Garlic, roughly chopped
1 cube - Veggie stock, low sodium
1/2 tsp. - Sugar (option)
1 tbsp. - Flour, all-purpose
3/4 cup - Heavy cream, using 12%, or milk
Salt and pepper (white) to taste
Notes:
- 1 st. boil, 25 to 30 mins or until the potatoes are soft.
- 2 nd. boil, 10 minutes to cook raw celery.

    And to think, I thought soup came in a can. You make the recipes look so easy. Can cornstarch be used to thicken the soup?

    Yes you can but add it slowly for it will thicken really fast if you add too much. Thankyou for your comment 🙂

    That’s definitely going on my to-do-list. Cream soups are my favorite (celery, potato, mushroom, chicken, all of them). Question: what kind of a blender is that? I will have to buy one.

    No. This is a really bad recipe. You added white refined flour full of gluten and high glycemic carbs for no reason at all! You did not caramelize the onions, did not fry up the celery, and your onions are cut too big. No proper chicken stock. Add some bacon for flavor. Add leeks. Add a couple of potatoes if you want a thickener. This looks like boiled water, disgusting. The celery you added in the end, was completely hard and raw, not even cooked. Gross.
