    I am Italian, however, I grew up in America and left my country at the age of two. My mom is an amazing cook and carbonara is one of my most favorite dishes. She would make it from time to time and it’s a good childhood memory. In the kitchen, she was always so peaceful and happy and that’s what cooking is supposed to be about: being happy and making wonderful flavors with any appearance. I also love these kind of old-timey cooking videos, so this is perfect. I feel like most people don’t understand how beautiful this is and how underrated this kind of cooking is. It looks great!!!

    KING ESM Sure, it's not the same taste but you can use any aged cheese you want (like parmesan cheese), just keep in mind: the more aged it is, the better. For my carbonara i use 2/5 pecorino and 3/5 parmesan. If you have any other questions feel free to ask them but i will reply tomorow cause it's 2.00 AM here :)

    I cure my own pigs cheeks (Guanciale) just to make Carbonara. Simple recipe made with simple ingredients. As was shown, just mix raw eggs with the cheese - I also add the parsley to the mix, season with pepper (no salt - plenty in the bacon and cheese), then add to the hot pasta before the cooked bacon and all it's rendered down fat. Belissimo !

    Compared to every other cooking video I've ever seen, I found the silence of the forest along with the omission of any talking or music, so freaking disturbing, that I absolutely loved it.     That is true I guess. But the history of carbonara is that it was easy to make at home (for italians) with ingredients laying around. So I don't generally consider it a fancy dish even with expensive ingredients.

    Well, I'm Italian too and I like it. Come on guys, he is not Italian and therefore maybe he cannot access guanciale and pecorino romano. He has even made the pasta by himself! I'd be curious to see any Italian doing a kimchi or handmade noodles by himself and see if he can follow the original recipe. And I can bet the carbonara recipe you cook is not the original either. Last but not least: I don't like saying "hey I'm Italian and approve". It sounds like fake superiority. Love you Almazan Kitchen, I drool on every single video of yours.

    Va bene, magari non può accedere a certi ingredienti e non sa bene la ricetta, ma qua c'è un problema di fondo. Se dentro la ricetta c'è l'uovo, NON FAI LA PASTA ALL'UOVO, è qualcosa che sanno tutti, non solo italiani!

    Recipes are not set in stone. I'm Spaniard when I see how the foreigners cook paella or tortilla, whatever, they do it "their way", it's ok. They're trying. And maybe they do something different and wonderful, who knows.

    How could anyone thumb down ANY of his vids? They are all relaxing visuals of food for play. No pillow talk. No distractions of gadgets or glam. If the recipes are not your 'textbook' form then take these as interpretations as an art form with poetic license. Giving these vids a thumbs down is like kicking a puppy.

    Honestly, after the first 2 mins I was not even focusing on whether this was authentic carbonara or not, just the ambiance of how this was filmed is beautiful to watch..feels so wrong to be in my modern kitchen right now...gonna save this for the Z Apocalypse lol..looks yummy anyway!
