When you're REALLY in a hurry to get out of the house on time, reheat those a casserole block or two in the microwave, Lay them in a big tortilla, break up into pieces, wrap it all up, and BOOM! You got yourself breakfast casserole on the go!

I’m picturing sweet potato “toast” slices for the bottom like a crust. I love making stuff like this as a meal prep for the week. Makes life so much easier. 😊❤️

Thanks for the recipe. Great recipe. I did change a few things because I had them on hand. I added mushrooms and yellow squash to the onions and peppers. Also added cheese in the mix and on top. I halved the recipe for my 8x8 baking pan. Keep up the good work. It was good, and did keep well for the next couple days.

Making this for my meal prep for the week using my Beachbody Turkey Sausage recipe I had in the freezer and thawed quick (always keep it on hand) and cheddar cheese. I cant wait to try it.

I made this for breakfast on Christmas morning (with cinnamon rolls for a little something sweet on the side 🙂) and it was a hit! I especially loved the flavor of the baked sweet potato in the casserole. Next time I’m planning on using spicy breakfast sausage to give it a kick. Highly recommended if you need to feed a crowd!

Hi, Lisa ~ Just wanted to tell that this dish is a keeper! I made it with Semi-Spicy Chorizo and mixed in a little Frank's Red Sauce. Nothing else was changed and everyone said it was d'lish and asked if I made it...I said, "Yep, easy recipe on KZread found me" 😉 I had to grab a couple slices for my daughter, who's on shift today - she's a Veterinary Technician. Cooked this Sunday ,my son mentioned brocolli so I got all the ingredients and added the frozen brocolli that I roast at 400 degrees same as sweet potato, it came out so good I thought I can save for later,but my son just like to eat it Sunday through Monday. Asking me to make another one,which I will tomorrow.thank you now this surely will be added to our favorites.
