Behind the scenes of preparing the BBQ of whole beef ribs roasted for 8 hours with special seasoning
Barbecue of whole ribs roasted over an open fire and seasoned with salt and cachaça (sugar cane brandy) was one of the main attractions of the Expochurrasco-International Barbecue Festival event, which took place in March 2023, and made the city of Porto Alegre, in southern Brazil, official as the capital of Barbecue.
The ribs were prepared by the RS Ember and Prose (#rs_brasa prosa) team, one of the most renowned grill chefs in the country, awarded in several competitions and events, both in Brazil and abroad.
Under the command of chef Edi Dagrê, captain of the team and also president of the Gaucho Barbecue and Chef Association, work began on Friday afternoon, with preparations for the structure of the station. At 4 am on Saturday morning, everyone arrived at the site and started work.
The big difference in this roast was the fact that the pieces were seasoned with cachaça, the most popular drink in Brazil, in addition to salt.
After about 8 hours, on the ground fire, the ribs were served, accompanied by a delicious flour of pequi, bacon and apricot, and salad.
The public was amazed by the taste of the meat. Everyone wanted to know the secret, which chef Edi happily shared: cachaça, simply cachaça, of good quality.
RS Brasa & Prosa, formed in 2021, has already won several awards in roasting competitions, such as world runner-up in Medellín, Colombia, in 2022, South American runner-up and runner-up at Paleta Atlântida 2021, among others.
