This is Behind the Counter at a local Japanese Handmade Soba Noodle Restaurant in Tokyo Japan's Ginza area. This neighborhood Soba noodle shop is cherished by it’s Ginza locals for its warm-hearted atmosphere and known for their freshly handmade soba noodles served until 2 am in the evening alongside an array of elegant Japanese style dishes using selected ingredients in addition to a variety of drinks. At lunch time the shop offers set soba meals at a great value which often times has customers waiting at the door as it’s truly a hidden gem, in this already opulent and glitzy neighborhood. Eri studied how to hand craft soba noodles under the owner as his apprentice. Her dream is to eventually own her own soba shop in the countryside where she can contribute to the local community by teaching kids how to make soba noodles. She’s been working at this Tokyo Soba Noodle shop tirelessly for the last 5 years to learn as much as she can, pouring her heart and soul into every bowl she makes.

This behind the counter was my favorite! The juxtaposition of the two workers who seem like total opposites but create a beautiful harmony in the restaurant was amazing to see. They work very well together and seem to compliment each other nicely.

Definitely gives credence to the saying "Soba connects people". Such a great dance they're doing in the kitchen, I can't imagine how the place would run any better with all 4 workers there - there doesn't seem to be enough room with how fast she moves around! 😁

@@Daylin821 seems like excess soba water. You see her portioning the soba noodles in the bowl after, pulling them from the cooking water. A lot of kitchen have drain on the floor for water and spills

@@Syris71HQ My mindset was from an American safety perspective where water on a kitchen floor in a restaurant is incredibly dangerous, a OSHA recordable. Especially thrown on the ground on purpose. 🤷🏼♂️

@@Daylin821 It is often seen in quite a number of the videos. The drainage is on the floor in multiple areas. Unless you are aware of Japan's food and safety guidelines you can't compare it to American standards.

Wow I’m amazed how well the 2 chefs can handle such a busy day by themselves, it’s incredible. This is definitely one of your best videos, it was so fun to watch. I love the bond between the 2 chefs, it felt like watching a grandpa and granddaughter running a restaurant 😂 I hope Eri gets to open up her soba shop one day and wish her the best, she’ll be an amazing owner.
