I'd leave the sponges in a plastic basket on top of the counter to evaporate the water and dry. If you leave the wet sponge under the counter, the moisture evaporates there, and never really dries. Mold, etc. can result.

Now this is a beautiful functional kitchen and love it. I am going to manifest to have this kitchen one day.
