I suspect your added carbs like breads are your problem Carnivores healing Autoimmune arthritis etc enjoy lots of fats with less protein.

My mom always cooked beef heart! It was great. She would have the butcher run it through the meat tenderizer and mom would dredge it in flour and fry it then put it in the over and slow roasted!
