I love that between both Pres and Frankie, they can't figure out the difference between fresh mozzarella and low moisture. Most pizza places do not make their own aged low moisture mozzarella, let alone are they serving it the same day. Fucking impossible. Grande (which the guy mentioned) is one of the most popular brands places will use.

Agreed. Baffling actually. of course there is a prep person when buying the cheese by the case. generally its bought in block and a prep person would cut and shred, not the pizza maker. Unless over paying for pre shred. Grande is about as good as it gets. perfect salt content and cook time to dough.

Yea it really is shocking that Pres and especially Frankie can't understand that. The big guy was pretty much spot-on with everything he was saying and basically just gave up on talking cause he didn't want to call out Dave for being a dummy. Also, I managed a pizza shop for several years in Upstate NY and will agree all day that Grande is pretty much the best of the best. Unfortunately, and not surprising, it's also the most expensive cheese by far that most distributors carry so you better be selling a lot of pies.

@@bailey4650 What is the 'wrong' and 'right' way though? Even top tier places like Lucali are not even using housemade mozzarella. They import their buffalo mozzarella from Italian company called Lioni and they mix it with a low moisture they have made for them. The idea of one guy making all the ingredients from scratch and then baking all the pies is no way near reality. You can't determine a place is bad just because they don't follow some false ideal when pretty much no one does.
"I don't understand what Kosher is" says the Jewish guy.

What the hell is Dave talking about having the pizza maker also make the cheese? Don't all pizza places just order the cheese from a distributor or grate it from a block and put it on the pizza?? They aren't fermenting cheese in the back to put on the pizza, right???

No normal, neighborhood pizza place is making cheese, none. Maybe the hipster places might, but even top places bring in their cheese. Dough and sauce are made in house, definitely not the cheese.

It's pretty common for kosher pizza places to also have sushi. The reason is because kosher restaurants either need to serve dairy or meat, they can't serve both. And obviously a pizza place will only be dairy. Sushi is a great accompaniment because it never has meat in it (dairy and fish can be mixed).
If that pizza was cooked another minute prez would have given an 8.1

@@merrittorius LOL! I work in a Pizzaria and have been using a 448 for many years now. Most pizza ovens(Blodgett, Garland, Baker's Pride, etc.) have 1.5" thick stones... the Marsal ovens have 2" stones. A PROPERLY cooked pizza in a Marsal oven will CRUNCH HARD when being cut. FWIW, it looks like that dough MAY have been a bit over-fermented which will cause a pale pizza. :)

In theory, Kosher pizza can be identical to non Kosher pizza with the exception that no beef products are allowed i.e. sausage, pepperoni..... However, in practice it's the low moisture mozzarella cheese that sets it apart, since more often then not it's made with veg rennet. Other than the cheese, everything else can be kosher and identical to non kosher pizza (flour, water, yeast, salt, tomatoes.....).

Ha. And now it seems every deli market has a sushi maker. Basically if a restaurant can't make up its mind what it wants to make, its probably not worth eating there.
Here's how you tell: when the pizza has *white* circles of cheese, it's fresh mozzarella (could be made in house or brought in). When the cheese is more yellow, it's reduced moisture mozzarella. The reduced moisture is what you mostly see on pizza because it melts better and is stronger in flavor. Fresh mozz is better in salads and such IMO but I've had fresh mozz on pizzas that were also excellent. In any case, almost NO pizzeria makes their own cheese.
That sounds about right. I had a Hasidic partner at work. (FDNY EMS) we used to go to a kosher pizzeria in Riverdale. The pizza wasn’t bad. But there was definitely something very different, perhaps even “off”.

It’s the same basic ingredients. Dough, sauce, cheese. Some places are better than others. Being kosher doesn’t determine quality.

NO, I eat in both Kosher and non kosher and I know kosher laws. Should be zero difference in taste but a good Italian shop like Lombardo's in Bay Ridge simply does a better job. If you put the pizza maker in Lombardo's and transferred him to the Kosher place, he'd source better sauce, cheese, ect.. as long as it's kosher and he'd make a better pizza. Simple as that.

Glad to see you doing a Kosher establishment. Sauce, oil, ingredients need Rabbinical supervision of the production process. Limited to certain companies. I delivered for a store for 18 yrs.- 1st Bite is Amazing!!!

Portnoy is such a dope. He's reviewed over 500 pizza's and doesn't know how they're made (prep v. making it). He's Jewish, and doesn't know squat about Kosher. And to top it off, he has a degree in Education. Go figure.

The way he reacted to the pizza saying how it was pretty basic average pizza sounded like a low 5, high 5 at best but gives it a high 6. Another pizza he reviews he says that the pizza is really good, gives it a high 6. Don't think he understands his own scale which I shouldn't be surprised at this point to be honest.
A kosher restaurant just has a rabbi come to turn on the ovens, grills etc. and thats all they have to do to make it kosher. watch the video on kosher tacos in LA and itll tell you all you need to know about kosher restaurants

Good quality pizza can be made with "fresh" or packaged or packaged shredded mozz. The latter are purchased from reputable sources that produce the highest quality cheese products. For those who are lactose intolerant or is vegan, there are some very good options from companies that make mozz cheese alternatives. Really good pizza can be baked in a brick (wood or coal) or in a decked gas oven. Places that use over sized toaster ovens(aka conveyor belt) will not produce a good quality pizza (such as all the corporate chains and other cheapie places) as they are good for toasting sandwiches but do not properly bake a pizza.
Kosher 101 for Dave ... Jewish Dietary Laws. To qualify as kosher, mammals must have split hooves, and chew their cud. Fish must have fins and removable scales to be considered kosher. Only certain birds are kosher. So let's talk PIZZA!!!! Since most ingredients that go into dough, sauce, and cheese can be kosher, kosher pizza usually tastes the same as non-kosher pizza. One final (and big) difference about kosher pizza, is that meat and dairy products are not allowed to be mixed (or eaten) together. Therefore, kosher pizza restaurants are not allowed to use real Pepperoni, Chicken, etc. as a topping, and typically go with a soy/tofu alternative.

The pizza that he eats is pretty much always going to be Kosher because he only gets cheese slices. According to the old Testament, you can't mix meat and cheese ('you shall not cook a calf in its mother's milk') so basically this place wouldn't sell you a pepperoni pizza or of course, the ultra-evil sausage pizza with it's cleft-footed pork product.

He doesn’t know what kosher is, which says that some Jews are less Jewish than others.
I’ve always understood 6.5 to be the most mediocre rating-it barely constitutes being “pizza”. Like it deserves narrowly earned the right to call itself “pizza” and it’s somewhat decent (at best), but it’s either the cheapest “football pizza”, something you buy if you’re in a rush or if it’s conveniently located extremely close to you.

kosher cheese doesn't have renet. Regarding the sauce I've heard non kosher places sometimes put meat in the sauce. And the certification is called a hasgacha!

Treif joints don’t put meat in their pizza sauce. The renet shouldn’t be an issue either because fleishig renet is generally only needed for more complex Northern European cheeses like a Danish Blue. I think the quality for kosh goes down because of the limited clientele (where else can they go?) and the added expenses for the mashgiach, the holidays that need to be closed, etc. Case in point, there’s a kosh Israeli joint up the block from me. Shawarma is gristley fatty dark meat turkey. Down the block is a Lebo joint with delicious juicy lamb/beef shawarma at 3/4 the price.

As an experienced ex- pizza maker in New Jersey, I can say without doubt, only the most Italian of Italian pizzerias make fresh mozzarella. The majority of pizzerias get cheese in blocks and grind it down themselves. Some grind straight mozzarella and others use a mixture of other cheeses grinded in. Example: Some will grind a 50/50 mixture of mozzarella and provolone or a 75/25 mozzarella/ provolone. That's why you always see the cheese grinded in long rectangle tubs and not in brine. When you see white circles of mozzarella on your pizza, that's USUALLY places that make it fresh but not always. Some buy fresh balls of mozzarella from local cheese makers. Ps. That old dude look like he was about to kosher your a$$ Dave. Never mess with the pizza maker.

Some foods we can’t eat together (for example: dairy and meat, dairy and poultry). Kosher supervision is when a kosher agency supervises the business to make sure that kosher standards are upheld. If they aren’t, the store will lose its certification and its Orthodox Jewish customers.
