Paksiw
1 medium sized bangus/milkfish (scaled and gutted)
2 thumbs ginger thinly sliced
6 cloves garlic
1/2 cup cane vinegar
2 bay leaves
1 tbsp fish sauce
2 small red onions
1 cup water (or more to cover)
2 long green peppers
1 small red bell pepper
A La Pobre with Fruit Sambal
Marinade
2 small deboned milk fish
1/2 cup white vinegar
salt and pepper
4 cloves of crushed garlic
Oil
10 cloves of garlic, minced
1/3 -1/2 cup of olive oil
Sambal
2 small red onions
2 red chillies
4 cloves of garlic
1 tsp shrimp paste
1 tbsp brown sugar
1 ripe mango
1/2 cup minced pineapples
4 tbsp crunchy onions/shallots (store bought)
calamansi
1 baby leek

Hi! Just a suggestion, you guys could also feature restaurants near universities, and asked them about how the pandemic affected them or pushed them to look for ways to get more customers (since they don't have students to buy their products anymore). I think many students would watch it! Also, BANGUS FTW HAHA 💖💖

Hi Erwan, just to share, my mom once experimented on using white wine vinegar for the paksiw. Turned out surprisingly well. It has been the most flavourful paksiw I've tasted up to date.
When we recently cut the cable, my dad has just been on KZread (& Netflix lol) a lot and after discovering your channel, have been watching your videos non-stop!

We always put ampalaya in our paksiw na bangus. You are right removing the scales of the bangus is good, its been a practice not to remove kaliskis when cooking paksiw.
We love the way you recreated some of our famous Filipino dishes, especially the bangus. It's kinda gourmet-like vibe with a tweak. Keep your phenomenal cooking videos coming! 🙌

Milkfish is an extremely “bony” fish. Its white meat has a mild flavor that makes the fish good for a variety of cooking preparations. Milkfish is usually fried, made into soup and even char-grilled. Milkfish, Chanos chanos, is a large herring-shaped fish.

I used to hate Paksiw until I learned simple tweaks on how some people prepare and eat it. Putting a little vegetable oil while the Paksiw is boiling levels up the umami flavor. To neutralize the sourness when eating, which also levels up (several levels) of deliciousness, use a dipping sauce made up of Bagoong Isda with smashed Banana Chili (used in cooking). This way I am likely to eat Paksiw with a mountain of rice or until my stomach aches. I am getting hungry now. LOL

I love milkfish. I never thought about putting bay leaves and peppers in the paksiw na bangus. I will try your recipe since the ingredients are easy to find here where I am. Bitter gourd is off the table. I will stick with my eggplant and pechay or bokchoy. Thanks for sharing your ideas.
