Bharwan Dum Aloo
Prep time - 45mins
Cooking time - 45mins
Serves 4
INGREDIENTS -
FOR THE CURRY:
Tomato roughly chopped - 6cups
Onion roughly chopped - ½ cup
Cinnamon - 1 small piece
Cloves - 4-5nos
Mace (Javitri) - 2nos
Star anise (chakri phool) - 1 no
Black cardamom - 1no
Cardamom - 4-5nos
Cumin - 2tsp
Green chillies - 2nos
Garlic cloves - 45-6nos
Ginger roughly chopped - a small piece
Bayleaf - 1no
Salt - to taste
Cashew nuts - ½ cup
Kashmiri chilli powder - 1¼ tbsp
Turmeric - ½ tsp
Water - 1 cup
Butter - 2tbsp
FOR TEMPERING CURRY:
Butter - 2tbsp
Green chilli chopped - 2tsp
Ginger chopped - 2 tsp
Turmeric - ½ tsp
Sugar - 1 tsp
Kasoori methi powder - ½ tsp
Cream (optional) - ¼ cup
FOR POTATOES:
Potato large 5nos
Turmeric ½ tsp
FOR THE FILLING:
Paneer grated - 1 cup
Cheese grated - ¼ cup
Capsicum chopped (assorted) - ¼ cup
Coriander chopped - handful
Green chilli chopped - 2tsp
Ginger chopped - 1tsp
Garam masala - ½ tsp
Salt - to taste
Pomegranate seeds (anar) - handful
