Balbacua

A very popular Cebuano dish made from ox tail and ox skin. The key to this recipe is to blanch the ox tail and skin and cooked with plenty of aromatics to remove the strong smell of the ox/cow. My secret is the addition of Mallorca which is an anise flavored wine made in Cebu. Mallorca removed the strong smell and also helps to tenderize the skin.Anisado wine is a good substitute if you do not have Mallorca. This recipe requires long cooking because the ox skin is very tough. My version adds peanut butter is added to improve the flavor.

    Thanks, Chef! Q; if I opt to soften the meat separately (as make ahead), do i make the liquid from the meat and then later make the sauce in it before combining with softened meat? Also, hope you and your family's recovery journey after the fire is going well.

    It is ox tail and skin plus some extra pata bones (no meat). In Cebu, they call this balbacua set when you buy it in the supermarket. You really can’t choose what goes in the set. Sometimes it is mostly beef skin. Ang part that has collagen. Thank you for watching.
