OVEN-FRIED ZUCCHINI...low in fat, high in fiber & healthy for you!! Fun, fast and easy to make yet delicious and crispy to eat!! Grow your own zucchini for summer food freshness or purchase in your local supermarket all year long!! Click on "SHOW MORE" for recipe...
OVEN-FRIED ZUCCHINI
Preheat oven to 475 degrees F.
2 medium unpeeled zucchini, rinsed & dried
1/2 cup seasoned bread crumbs
3 tablespoons Parmesan Cheese
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked
1/4 teaspoon garlic powder
1/4 teaspoon smoky paprika
1 tablespoon water
1 tablespoon canola oil
1. In small mixing bowl add bread crumbs, parmesan cheese, salt, garlic powder, black pepper and smoky paprika. Whisk. Set aside.
2. Add water and oil to a 1-quart plastic bag. Set aside.
3. Cut the zucchini into quarters lengthwise. Cut each quarter into halves. Remove seeds with sharp paring knife. Cut each quarter into halves or thirds to make uniformed zucchini spears . Add cut zucchini into plastic bag with oil and water. Shake gently.
4. Roll each zucchini spear in the bread crumbs mixture until lightly coated. Arrange in a single layer on a baking sheet sprayed liberally with nonstick cooking spray.
5. Bake at 475 degrees for seven minutes or until golden brown.
Yield: four servings.

    Those seeds are immature and fine to eat. The younger zucchini skins are tender not chewy to answer below question. I used to grow my own. If you have a sunny spot and some compost, and of course water them every day, the plants are very prolific. Love zucchini sticks. I dip mine in sour cream or ranch dressing or chipotle mayo (don't need smoked paprika with chipotle mayo)

    Baked or as this cook says, "Oven fried" zucchini, is BETTER THEN DEEP FRIED! They're lighter and if you spray a little oil on them taste the same...just not with all that heavy oil!

    It's not always easy to find non-propellant cooking spray, but there are spray bottles that you can put your regular oil choice in and use THAT to spray. I think my non-propellant coconut oil in the cabinet is PAM. Those propellants also ruin non-stick coatings, too. I've ruined more than one waffle iron that way.

    Mine were too soft after 15min baking and the batter didn't stick that well. On top of that the zucchini was bitter.

    The smaller the zucchini the more tenter the skin and you don’t have to cute out the seeds. Not chewy!! If bigger zucchini the skin can get tougher and the seeds larger. May have to remove it the larger the zucchini.

    I used parchment paper over my baking pan then I spread oil on the paper with a basting brush . No spray needed .

    kosher salt is as bad for your health as is the table salt. If you want to go natural and get some minerals from the salt then use Pink Himalayan or Grey Celtic salt.
