Aww, a (virtual) guest appearance by the Retro Nana! Good shout on the custard. I love some golden caster sugar, but if you need brown and don't have it, just use 50% white sugar and 50% golden syrup; you get pretty much the same result.

Baking soda (Sodium bicarbonate) is a pure compound. Baking powder is baking soda mixed with acidifiers. You need baking powder when the food has little to no acid. Baking soda can only be used in acidic foods.

Failing that you can just have a store cupboard with baking soda and citric acid. If you mix them together in the right ratios with icing sugar you have sherbert.

Bicarbonate of soda is just 1 ingredient. Baking powder is bicarbonate of soda and a powdered acid I believe is called cream of tartar and cornstarch.

For best results, try mix the sugar with the wets and not with the dries, also for apple flavoured things id recommend brown sugar for caramel like flavour.
