    Hi there and thanks for your tips - love your book and I'm about to bake my pieces tomorrow. I have a conventional (electric) oven, living in eastern Canada, and would appreciate an approximate baking time for stand size pieces such as wall and roof pieces - you recommend turning pieces 180•, 2/3 of the way through the baking process. This doesnt give me much of an idea as to when I should plan on turning my pieces around in the oven. Any insight would be most appreciated. Sincerely, Annie

    Hello from California. I love that it's March and you're baking a gingerbread house, Annie. I am curious, what's the theme? As for your question, if I could answer it, I would. But I can't. Here's why. There are a myriad of variables involved with the science of baking. Specifically when it comes to gingerbread house parts, how long it takes to bake them depends on their size and shape (I cannot venture a guess as to what you mean by 'standard' since no such benchmark exists), the thickness of your pieces, the temperature calibration of your oven, the performance of your oven, the thickness of your baking trays, the rack level where you put your trays in the oven (some spots are hotter than others), how you choose to orient your dough on your trays, whether the trays are hot or cold when you begin, and how many times you open the oven during the baking process since that allows heat to escape, which slows down baking time. Even if you could provide me with all of this information, I'd still be unable to respond with the answer as I have never baked your design in your kitchen under your conditions. So...you are the only person who can figure this out. As you experiment, you will get a feel for it. You can do this! Good luck.

    Thanks - I will just have to test in that case. By the way I looove your dough recipe!! No leavening is right! To answer your question, regarding theme? A cosy little cottage (winter scene)... you know, we are still very much snowed in where I am. I've been making gingerbread houses for a good while now - from xmas scenes,to halloween themes, basically because I love making them and then donating them. This one I am making is my first in three years. I was bed-bound over the holidays for 7 weeks. Gingerbread never got done sadly but March Break is coming up for the kids next week and I will be giving it away to a family in my "Buy Nothing" community: I get my fix making it and the kids get to eat it :)

    @@alv7990 I can totally relate to the joy you get from your creative process as well as the freedom you get from setting each of your creations free. It must be so nice to find yourself out of bed and back in the kitchen doing that again. It's the best kind of medicine, right?!
