    Nice little news segment on bread. Real bread, without all of the nutrients stripped out, is a healthy food.

    I believe it’s the fermentation that makes the bread more nutritious. Just like with any fermented food. Commercial bakeries don’t do any of that.

    I grind my own wheat and eat a diet of mostly grains and veggies and I have lost weight. Bread is not the enemy. The removal of nutrients and addition of unnecessary fillers and preservatives are the problems with our food today. Great news story!

    I started milling my own flour a couple of weeks ago and I was finally able to get my kids to eat while wheat bread. They wouldn't eat store bought wheat bread, but love the homemade wheat bread with fresh milled flour. It's really not that hard. I use a ninja right now. Eventually I'll get a better mill but this works for now.

    There are basically 2 western countries that changed their centuries old bread culture for industrialized products. Now the UK and the USA both lead the world in unhealthy food culture. As an onlooker, the logical consequence from your actions are overweight people in your society. Ever consider the cereal/softdrink/snacks you find in your supermarket are the consequence from romantisizing industrialized food?

    What a novel idea...non-industrialized foods are healthy?! The 15th century is calling.
