Chef John, Chef John, CHEF JOHN! Question: What if you added some finely grated onion in there, and instead of baking them on a sheet, you could press the unbaked, cooled off mixture in little ice cube trays (the ones with the silicone bottoms), and freeze them, and after they're frozen, bake them like frozen tater tots? Yes? No? Maybe so?

The problem is all that thrice-cooked cauliflower taking up space where more cheese could be. Here's the best procedure for making cauliflower fries: 1. Blitz a head of cauliflower in a food processor just like in this video. 2. Now throw the processed cauliflower into your compost bin. 3. Cut cheese sticks from a variety of your favorite cheeses. 4. Dredge in egg, flour, and breadcrumbs 5. Deep fry 'em 6. Presto! Cauliflower fries!

Let me explain why you are awesome, Chef John. Many, many, many people cultivate an image of themselves on social media that involves showing the best stuff with the right filters. And then other people get depressed when their own messy actual life doesn't match up to someone else's carefully crafted presentation of a life. You gave us a recipe that just plain didn't work out, with your trademark wit and dad jokes. I commend you, sir. You are the Norman Mailer of your cauliflower failure.

I'm a private chef and I've been building my business the last few years, and Chef John has taught me many last minute lessons when I was trying new recipes that I had no clue about, or just wanted to learn new techniques to expand my menu. But this was possibly the most important episode so far, that you are the "Masters of your own Disaster." The Chef John's equivalent to Bob Ross's "Happy little accidents." A true master is always a student, and cooking just like any other craft, requires experimentation. Sometimes when I fumble a good meal, it's always because I forgot the basics, or because I was trying something new and it didn't work. A lot of people would quit in that situation, but a true chef will go back to the drawing board, take a deep breath and make sure his next attempt is worlds better.

I've been watching Chef John for almost half a decade now, and I love this! John, if you read this, I want you to know my story: I was taught to cook by my mom by the time I could reach the counter. She is also a trained professional chef. I've always had a firm grasp on food, nutrition, and flavor. Then I started to browse pinterest. The amount of absolutely ridiculous "healthy" recipes is mind boggling. I read these posts from food bloggers and think, "That's not how food works." This video is the absolute BEST answer to how I feel about some of these recipes. Thanks, man. I needed this laugh!

For any keto folks wanting to try this....chef spread the batter twice too thick in that caserole dish, that was the fatal flaw. Spread on a parchment lined cookie sheet, very thin, and they turn out crunchy, and tasty. Mozzarella instead of cheddar, more cheese on top for that final crisp after cutting into strips, cheddar works well for that step. and they pair well with a fresh made aouli, rather than the obligatory ketchup.
