BADAMI TAWA QEEMA
Ingredients
Chicken mince ½ kg
Onion chopped 1 ½ cup
Ginger garlic paste 1 tbsp
Salt 1 tsp
Yogurt ¾ cup
White pepper ½ tsp
Black pepper ½ tsp
Almonds grinded 2 tbsp
Roasted and crushed cumin 1 tsp
Butter 2 ounce
Oil ¼ cup
Nutmeg ¼ tsp
Mace ¼ tsp
Green cardamom ¼ tsp
Cream 4 tbsp
Tandoori nan 2 to serve
Coriander leaves 2 tbsp
Ginger 2 tbsp julienne
Almonds 2 tbsp sliced
METHOD
Heat tawa, add ½ cup water with ½ cup oil, add chopped onion, ginger garlic paste, cover and cook till onion soft, add chicken mince with yogurt, salt, both the peppers, cumin, cover and cook for 10-15 mins till mince tender then add green cardamom, mace and nutmeg powders, add cream, mix well. Lastly add butter, coriander leaves, fry well, on the same tawa, fry nan, serve fried nan with badami mince, garnish with almond slices and ginger slices.

CREAMY MAKHANI TIKKA
Ingredients
Boneless chicken 750 gm
Meat tenderizer 1 tsp heaped
Ginger garlic paste 1 tbsp
Salt 1 tsp
Dried fenugreek leaves ½ tsp
Chat masala 1 ½ tsp
Allspice ½ tsp
White pepper ½ tsp
Black pepper ½ tsp
Cream 2 tbsp
Yogurt 4 tbsp
Coal 1 for smoke
Lemon juice 2 tbsp
Wooden skewers as required
Butter chicken masala 2 tbsp
Ingredients for Sauce
Butter 4 ounce
Garlic crushed 1 tbsp
Cream 4 tbsp
Tomato paste 2 tbsp
Water ¼ cup
Onion rings as required
Sugar 1 tsp
Cucumber rings as required
METHOD FOR SAUCE
Put all the ingredients in a sauce pan, cook until sauce thick.
METHOD FOR TIKKA
Marinate chicken with all the ingredients for 1 hour, put chicken on wooden skewers, heat oil and grill chicken, give dum of coal, then add the grilled chicken with the sauce and cook for 2 mins on high flame, serve hot with onion rings and cucumber slices.

HANDI PRAWN PULAO
Ingredients
Prawns ½ kg cleaned
Onion chopped 1 cup
Ginger garlic paste 1 tbsp
Whole spices 1 tbsp
Green chili grinded 8
Lemon juice 2 tbsp
Allspice 1 ½ tsp
Yogurt ½ cup
Turmeric ½ tsp
Rice ½ kg
Fenugreek leaves 2 bunches chopped
Green chilies whole 4
Salt 1 ½ tsp
METHOD
Heat oil in a handi, fry onion, add whole spices, fry, add ginger garlic paste, green chili grounded, fry well, ad yogurt, fry well, add prawns with salt, turmeric and lemon juice, lastly add fenugreek leaves, green chilies and water for the rice for about 3 ½ cup, add soaked rice, cover and cook till rice done, leave it on dum, serve with salad.
