    Enjoy your show guys. I have a couple of hints after watching this show. To make your parchment lay flat, crumple it up and then smooth it on your sheet pan. It should lay pretty flat. We go through lots of bacon and I bought a grease container from the big online store. When you cook some bacon, pour the grease in the container and the screen will catch the chunks and then you will have bacon grease to use for flavoring when needed.

    I like how you call it pork tallow and that reminded me of Phoenix Tallow a place I drove truck for, they picked up everything left over from butchers and slaughterhouses except the hides and used grease from small restaurants and McDonalds, Jack in the Box and wherever they made french fry's mainly. It wasn't a bad job in the winter but summers were something you had to live through to believe it.

    ​@@TheGriddleGuys I had started there in November and in Phoenix we don't really have what you know as winter where things freeze it's more like an unusually cold summer and our summers show up like clockwork in May and spring and fall only happens north and east of Phoenix. They don't call Phoenix the Valley of the sun for nothing.

    Not all videos have to be THE MOST AMAZING THING...I'm really glad you experiment because eventually you will hit that one thing that nobody has thought of before and when it catches on, you can say that came from the Griddle Guys!! Great job guys. How about Sous Vide Ribs next time!! :)

    Instead of the bacon fat marinade, maybe a liquid smoke-solution brine/braise would impart the missing smoky flavor you're after. Then crisp them up on the griddle. Would be a game changer for folks in apartments or those that don't have a grill.

    @rickbooher8224 Also suggested a smoke gun. Both he and you have made great suggestions and I am in agreement. The result would be better than what we got with this technique.. Plus it made a mess. Too many dishes to clean, house smelled like bacon for 3 days etc. Good call Jerry, thanks for sharing the idea! Cheers! -N

    Hi Cheryl! Good to hear from you! They tasted OK, I mean if I got served them at a restaurant or someones BBQ I would be fine with it but overall, the result was not worth the level of effort.     Instant pot the ribs, cook some hickory smoked bacon on the griddle, and griddle finish the ribs in the bacon fat. You could be done in an hour start to finish.

    Years ago I injected a venison hindquarter with bacon grease before smoking it on gas water smoker. It turned out delicious, but then again you could inject a combat boot with bacon grease and it would turn out good

Your comparison of injecting a combat boot with bacon grease made me chuckle, but it's true that bacon grease has some serious flavor power.     Good video, the guys and I were cooking one day and after a few adult beverages we decided to do the exact same thing you did the same way you did it except we use chicken wings.... Best wings we ever had. We use the same process you guys did.

    There was a guy when I used to compete on the BBQ circuit who used to wrap his ribs in bacon as was suggested below. He won the ribs category several times, beating me out. He also used to do chicken lollipops if anyone from that time is reading this, you'll know who it was.

    Maybe smoked paprika on the ribs for smokIness in cooking then with the conjunction with the use culinary smoke gun covered the ribs with smoke for ten minutes before serving.

    Hi Rick, Thanks for watching, sounds like you know your way around a kitchen,,, I would have to agree with you... your suggestion would have resulted in a stronger and cleaner smoke flavor.     @@TheGriddleGuys the smoke gun adds flavorv to drinks and coctails as well as other foods. Until you get one you will discover many other uses great with cheeses and fish. You can get them with a glass dome so you can see the smoke inside going around the food or drinks. But a good metal bowl wit tight fighting plastic wrap over the top to hold in the smoke as will just little small opening to allow the smoke to enter and seal it up to rest for few minutes or longer. They aren’t that expensive either. You can get various types of wood for it to get different flavors. It tends to be subtle flavor compared to smoking or grilling over charcoal or wood.

    The wife wanted me to do a real maple syrup type brine for ribs. She liked it, me, not so much. It was like eating ham ribs. Just not good. As far as cutting the ribs, I like to slice it right down the bone, they are easier to eat off of one side, not corn on the cob style.

    So the important part of this video seems to be getting glossed over. The clear choice in mayo is Cains. No debate. Hellmans (Best Foods) is the OG, ok, fine. Miracle Whip is not mayo, it’s "salad dressing." Duke’s is phenomenal - it’s like what Hellman’s wants to be when it grows up. But Cains. Cains is the hands-down winner. Cains is what you get when you order a 10/10 sub and wonder why your mayo doesn’t taste like that.
