Add salt and some oil in boiling water and boil broccoli for 1 min. By adding oil in water it will be green and shiny and you don't need to shock the brocolli in ice water. I have cooked this many times, always crunchy.

Hii, I followed your easy steps and made this during the lockdown period and my housemate loved it. I made it again(watching the video again) for my mom and she said it taste like the shop, really good. Looks great! Instead of cold oil, I heat it up until it's smoking before pouring it on the veggies. Awesome flavor. Try it!

Hi Somjit, I hv tried successfully your simple recipe for stirfry cabbage w garlic. And thanks for advising how to overcome the hard stem part without overcooking the cabbage. M going to try this kailan recipe asap. Btw if skip the cold water part is it ok?

Hi Donald Trumpet, thanks for the question 😄 I'm so happy to hear that the stir fry cabbage with garlic recipe is a success 😄 Thank you for trying out this kailan recipe. The cold water part was included to instantly stop the cooking process of the kailan (shocking the vegetable) so the kailan does not become overcooked. This step ensures that the kailan stays firm and crunchy, with its vibrant green colour retained even after serving, otherwise the kailan's texture will be soft (on the limp side) and its colour will be slightly dull, but still tasty 😄 It is possible to skip this step - but the kailan needs to be consumed immediately so the texture will not be too different. 😄 Hope this helps!

Very well displayed. I suggest you could for less time. Avoid the ice water. And add toasted sesame seeds on top.

Hi Roy Singh, thank you for the feedback 😄 Yes, adding toasted sesame seeds would be very delicious 😄 The ice water is to stop the cooking process so the kailan won't be too soft, but this step can be skipped for a softer kailan 😄 It would still be very delicious 😄

After blanching the kai lan putting them into ice cold water. Don’t u re-heat the veg before pouring over the sauce

Shocking the kai lan with ice cold water will only stop the cooking process, resulting in a warm, crunchy vegetable. It is okay to skip the shocking process as well, the kai lan will be nice and hot, and softer to eat 😄

Hi Fern Low, if you don't like it cold, after a soak in cold water you can put it back in the hot water for about 10 second and there you have a hot and crunchy kailan. Thanks for the comment.

Andrea Rose Cantal . Oyster sauce has multifaceted tastes and that is adequate for the kailan. Sesame oil will carry a nice fragrance and lift but it’s absence will not ruin the above cooking.
