Yo 2orLess I just watched some of ur videos!

For some reason I have it in my head that conquered territories flip back to their original controller if the occupier doesn't least at least one infantry in them. Have I misunderstood the rules?

That’s not in the out of box rules, and I don’t play with that rule. But I do know that there are quite a few people that like to play that house rule.
