Award Winning Pickled Eggs - Kansas 2 time winner

My "Award winning" pickled eggs are easy to make and super yummy with beer. I won Blue ribbons 2 different years for my eggs and Jerky...Yep...Local county fair. Also don't forget the 1/2 fresh squeezed lime per quart. Forgot in video but it's in the description. The Lime takes these eggs to the MOON. Ready to eat in 24 hours and by 48 hours.
The 4 day thing is for the Unwashed Farm Fresh eggs we use. Eggs straight from a chicken are hard to peel so they need to sit a few days so the egg's sulphur can soften the shell a bit. Store bought eggs can be used immediately and should be kept cold. Unwashed Farm Fresh eggs have a natural "bloom" coating allowing them to be stored at room temperature for weeks.
This recipe is NOT meant for long term storage like traditional canning methods. Store them a couple days at room temp...or put them in the refrigerator for a week or so. Still tastes good...just a little rubbery.
My eggs are great beer snacks food that make horrible farts with good hang time. Perfect for the car! In our house a quart doesn't last two days. Our downtown pool hall has a 2 gallon jar of pickled eggs on the counter and I know for a fact they are 6 Months Old. They got that Jar in December and it's now May 12 with a couple dozen remaining to sell. The pool hall eggs sit at the bottom in cloudy flat vinegar right next to the Jars of Turkey Gizzards and Pigs Feet. All sitting on the counter NOT refrigerated. Those Three delicacies are self service with metal tongs hanging on a hook.
We Midwest folks (including Texas) love our traditional Cowboy food. We fight over who's first in line at our Lions Club Mountain Oyster feast. All you can Eat $12 with Pig and Cow testicales served with hot pickles and white bread.

    Hell yea. Here in my small town of 2,800 the competition isn't too tough. One year I entered pie baking at our county fair and won a blue ribbon. It was a dare from my wife.....I bought a peach pie at the grocery store, put it in a glass dish and sprinkled some sugar on top. Thanks for watching. Rick

    At my mom's restaurant she buys a Costco pie and sprinkles sugar on top of it as well and sells it on the menu. One time a customer bought a whole pie and entered it in the state fair unknowingly on her behalf. She won second place.

Spicy, slightly sweet with a good ZIP kick. Right now...yea right now.... Ive got a 6 pack of Coors light and a quart of 3 day old eggs ready go tonight. I start to layer the eggs down at beer #4.     Very similar to how I make my pickled eggs. However I boil the brine and then add to the eggs, refrigerate and wait at least a week before I eat them. The longer the better. Also, I use a mix of half water half vinegar, but the spices I use are exactly the same. Another way I make pickled eggs is to just throw the hard boiled eggs into pickle juice once I'm finished with pickles, pickled banana peppers, pepperoncini's, or whatever I have pickled. They're delicious that way too! Thanks for a short video on how to make these. You did a good job!

    If they are farm fresh eggs (that haven’t been washed) you can leave them on the counter for four days. If you do this with store bought eggs they spoil very quickly. They have been washed. Washing eggs removes the protective film from the egg allowing it to spoil much faster. That is why in the United States we refrigerate our eggs. Most people in the world don’t.

    You are partially correct. Washing eggs does remove the protective film, and without the film they'll spoil quicker. However store bought eggs, with intact shells, will last for four days on the counter. I take store bought eggs backpacking with me in one of those camper plastic egg protectors and they've done fine. I wouldn't go past a week that way, but four days I'd be comfortable with based on my own experience.

    I'm replying to myself here because others are upvoting it. The author mentioned to me in another thread that the 4 days is for farm fresh eggs to make the shells come off easier. Store bought eggs are already old and should not be left out for food safety reasons. Leave your store bought eggs in the fridge.

    I leave store bought eggs out for days quite often. I admit that they will not last as long as farm fresh eggs,but there is no need to panic if they get left on the counter for a few days. Never had any kind of problem whatsoever. We are told to do a lot of things in the USA that are not necessarily needed because of lawyers and their frivolous law suits.

    I farted on my dog after eating five of these, his nose and lips curled and he started sneezing, then he vomited, luckily I have tile floors. I then fed him two of these eggs, now anyone who owns a dog knows that they don't usually fart audibly, and the gas just kinda leaks out. He laid down next to my mom on the lounge and gassed her. She was so upset about it she was retching and hollering at the dog. 5/5

    This recipe is NOT meant for long term storage like traditional canning methods. Make these eggs and eat them in a couple days at room temp...or put them in the refrigerator. Still tastes good...just a little rubbery. Looking back I should of made a few clarifications regarding food safety. I had no idea this video would take off like wildfire. The 4 day thing is for Unwashed Farm Fresh eggs. Eggs straight from a chicken are hard to peel so they need to sit a few days and let the egg's sulphur soften the shell. Store bought eggs can be used immediately and should be kept cold. Unwashed Farm Fresh eggs have a natural "bloom" coating allowing them to be stored at room temperature for weeks.

    The difference may be... washed eggs versus unwashed eggs. Unwashed eggs keep a ton better than washed eggs do.

    @@RickDean I'll spare you the experiment. I once (in a younger life) got a bright idea; I was going camping. It seemed wise for me to crack a dozen eggs and pour them into my stainless thermos. Then I wouldn't have to worry about breaking them on the trip, and I could just pour them out as needed. Bright, right? Only... I forgot to take the thermos. Forgot it COMPLETELY, even after getting back. Except... there was this smell in the kitchen. Bad smell, like... something died gracelessly and horribly. It took me a week or two to finally spot that thermos standing idly on the countertop, slowly oozing this... this grey stuff. It was the color of fresh mortar, and it smelled like death incarnate. What's worse was... there was a whole thermos of the stuff behind that cap and it was my good stainless thermos! Ne'er do that. Shake a child, but never put eggs in a stainless thermos out on the counter.

    @@scoper7897 If the salt content is high enough the eggs are safe nearly indefinitely. Taste might degrade. But may people say that Chinese 100 year old eggs are good (I think I will pass)

    Definitely going to have to try these! I love all kinds of pickled eggs, red beet eggs, mustard eggs, egg salad. Heck I even cut a hard boiled egg in half remove the yolk and fill the white with vinegar salt and pepper and eat them that way.

    I take a full bulb of garlic and microwave it for 30 seconds to a minute, depending on how strong the microwave is, then the cloves just pop out. A microwaved garlic clove is delicious by itself. I use these in my pickles. Cooking them first makes them sweet and delicious. I’m not even big garlic fan, but there’s something special that happens when you cook them first. I also add onions to my pickled eggs.

    LOL. I cant stand 'fresh' hard boiled eggs. I can only imagine that these would put me off of eggs altogether.

    Thats the thing, I like eggs made in any other way except when they're hard boiled. They are so bland and boring to me that Ive never made them in my life, and I cook daily. Oh and also the sulfur smell... I like my alcohol/beer without and food next to it.

    barbershop22 Agreed!! Also don't forget the smoked oysters on crackers with hot sauce on top! I don't know how people live without having these occasionally.
