I looooove mushrooms! I really dislike shiitakes though and they seem to be everyone’s go to lol. I once found mushroom powder pasta that was interesting. And it was at a big lots which was also interesting

Shiitake tastes like nothing to me, I like it for the texture only.

There are 2 types of shiitakes and the one with a cracked surface are bitter and the other kind with a smooth even colored top aren’t bitter. When dried, they are quite bitter if you don’t squeeze out the water after soaking them. My family squeezes them several time until the water is a light color

Shiitakes taste like air. I prefer portobello mushrooms. Shiitakes are cheap so obviously it's a popular selection.

I'm lactose intolerant so I may try this with coconut milk and Miyoko's butter! Looks so delicious.

Cashew will probably be a bit more tastier, put in a bit of tahini for extra creamieness

Omg I had udon noodle the other day on what was supposed to be my second and last cheat day for a few months and needless to say I ate it for two more days. It was AMAZING! It’s like the texture of pirogies or dumplings like that thick starchy taste and texture! Soooo hard to stop eating!

Wow this looks rlly good I’ll try this out sometime. Also, I feel like this sauce will pretty much go with any types of noodles and even without the milk, u could enjoy it as it is.

I've been crazy into mushrooms this past year and made something similar a few months ago and can agree it's beyond delicious. The butter at the end is key, I'm not sure is alternatives are as good flavor/texture wise for all the lactose intolerants out there but it's worth a shot.

I just tried this! I didn't have any cream so I had to use milk. I added a couple of tablespoons of flour after the butter and cooked it a bit to make a roux before adding the dashi stock and milk. Makes it thick and creamy! Thank you for this recipe!
