    I remembered I saw him at the airport in Albuquerque where I worked as a wheelchair agent, he came out of the plane and I was standing there waiting for a passenger needing a chair but managed to speak to him.. greeted him kindly and welcomed him to NM. Shortly after a few weeks later he passed away.

    I loved watching him on those nights when I couldn't sleep or early in the morning with coffee.. I wonder if he knew how famous he really was. Just in restaurant circles but by people who would never be able to travel around the world. He gave us something we would never ever have enjoyed. I will continue to watch his shows, and will hate knowing there will be no more new ones.

    I was told the best way to cook a steak (in a pan) is using very high temperature otherwise the steak gets tough.I worked in a very popular steakhouse once (Joe's Steakhouse) and they cooked their steaks over a kindling wood fire.They'd get these small sticks of very dry kindling burning in a bright blaze and then quickly cook the steak (in a long handled grilling basket) over it.Customers from all over the country loved them!

    Great tip. One more thing. Get a small resting rack to keep it off the cutting board. Wood is an insulator. The steak will keep cooking at a higher rate right on the cutting board than it would completely in the air. And it keeps the side against the cutting board from steaming as well

    This is an outright fallacy that demonstrates the complete failure of our educational system and an overall lack of common sense amongst the general public. Wood will conduct heat AWAY from the steak at a faster rate than air precisely because it is LESS of an insulator by a factor of 5.

    I've tried this both ways. Waiting and not waiting. Honestly, I could not tell a difference. What really made a difference was the marbeling. The more it had the better the texture and taste. Hard to wrong with the ribeye because of this.

    @mikeg2491 IF you google resting steak, you can find where a chef tested cutting a steak immediately vs 5+ minutes later. If you cut immediately all the juices spill onto the plate If you wait 5 minutes, the juices will stay inside the steak when it’s cut. Therefore the steak is more juicy .

    Best way to make a steak is the reverse sear method. Pre-heat the oven to 250, stick the temperature probe of an in-oven thermometer into the middle of the steak, set the temperature alarm to go off at 125-129F, and stick it into the oven. It usually takes around 45 minutes to warm up but depends on the thickness of the steak. When the internal temp gets up to 125 pull it out and let it sit for 10-15 minutes. Then, quickly the sear the outside of the steak in a screaming hot cast iron pan coated in coconut oil and bast the steak with melted butter. I even have a $150 sous vide cooker and think the reverse sear method tastes better. You get a juicy steak that is a perfectly even medium rare all the way throughout the middle and a crispy, flavorful crust on the outside.

    I usually prepare my fresh rosemary and butter while it's resting. I also cook up some onions and mushrooms as my topper while it's resting. At about the 5 minute mark I put my butter mix in the pan and once melted and hot, I put the steak in for another 1 minute on each side to let that butter and rosemary just flavor it up even more. Plate it and put the onions and mushrooms over it. YUMMY!

    Here's another lesson he didn't pass on that may be available to you as a cook in the future. On Christmas I cooked a 7 pound prime rib. Came up beautiful. Straight out of the oven at 450 degrees I let it sit on the counter for about 15 minutes let the juices go back to the center and and distribute itself evenly throughout the meat. With one hand I had a turkey / steak Fork and with my other hand I GENTLY went to go pick up as it was extremely tender. No sooner did I lift it an eighth of an inch out of the broiler plan did the broth within the meat when all over my left hand like a little volcano. I would say about a good 4 tablespoons went over my left hand. Lesson here is if I had attempted to do the same thing as it came right out of the oven instead of leave it alone just as Mr. Bourdain said I would have had second to third-degree burns and been in the emergency room on Christmas. So there are other benefits to letting steaks such as prime rib or any steak to let it sit. Be safe in that kitchen. Never get complacent. Enjoy!

    7 lb Prime Rib you rested for 15 minutes???? First, sorry you hurt yourself however I'm confused. If using direct traditional heat you would rest the roast far longer than 15. The insufficient resting time is exactly why the hot juices ran out of the meat in the first place. So compounding mistakes by the cook is what lead to unfortunate Injury. That being said, I have tremendous success using the high heat , slow roast, oven off technique where the Rib Roasts and rests all within the designated cook time and is ready to slice and serve upon completion. IF you are unfamiliar with the technique, you can look up recipes by Paulie Dean and the Food Wishes KZread channel.

    But then you're steak gets ice cold? Whenever I let my steaks rest they are no longer at a temperature that I would enjoy eating it at. And I don't have a fancy heat lamp. I find my steaks are perfectly fine when they come out of the oven, onto a plate, I season and butter my baked potato, put some a1 sauce on a side dish, put some greens on my plate, sit down and start eating, is all the "rest" time it should need.

    how do all of you prefer your steaks? I love mine with sautéed mushrooms, a baked potatoe with butter, and chives and some nice finely cooked veggies... no offense y'all but you don't need A1 sauce if you know how to cook your steaks.

    I like mine medium well to well with some kind of buttery, garlic type sauce or with A1. Not because it is necessary to taste good, but because I just like it that way. Personal preference and all that. Baked potato and that would also be a nice addition.

    Hi, Neighbor! the only way to know indefinitely how they operate is if you cut into your steak when it's dropped in front of you. A customer should not have to stare at their steak as it rests. If it wasn't rested, it would be tough and dry regardless of doneness, either send it back or don't ever return.

    +351cleavland if you're looking to tenderize your cuts of beef like chuck shoulder, chuck roast, tri-tip, Western Griller (bottom round), shoulder center, and coulotte (top sirloin cap), I advise that you do it with a meat tenderizer hammer and not a frisbee. Do both sides, and do it before you cook your beef, not after. A frisbee won't get the results you want. :3

    LOL .. any good chef knows to let meat sit for the 5-7min. period. If you don't know this then you need to try it cuz you will find out the easy way that the moisture in the meat stays in as long as you don't poke it. Another point i would like to make is that you should use tongs and not a meat fork when you turn it. No point in opening holes in your nice meat to let the juices drain out. You should also cook the steak or chicken or whatever it is 3/4 of the way through only one side before you turn it. At least try it.

    Jonathan Nagela that's what heat lamps are for. Your resting the meat, not cooling it. But if you can't time out your dish properly to accommodate an additional 5mins for a 3-8min item, you shouldn't be working the line.
