Andrea Nguyen, author of Vietnamese Food Any Day, shows us her recipe for the classic Vietnamese dipping sauce, Nuoc Cham. Feel free to add more lime juice, fish sauce or sugar to suit your taste and achieve your preferred balance of sour, sweet and salty.

    Nouc Cham is like gold... I usually smash the garlic and chilies in a mortar, add my sugar, my water and vinegar and mix everything! Yum!

    I love this recipe I had some spring rolls from a Vietnamese restaurant last nite and saved some of that sauce to use to cook some pork chops today. I used it and realized I need this sauce in my life whenever I want it. Lol the recipe was fairly simple and the ingredients are obtainable. Thank you.

    This looks so good. I used to work at this really cool pan-asian/vietnamese restaurant that had the best fish sauce ever. It looked a lot like the finished product here so I'm going to have to give it a try. Great tip about freezing the chilis too.

    Just curious, Viet food uses a lot of pork, do you eat it or just stick to other proteins? I dated a Middle Eastern guy and he's a Christian so he's fine with pork, but I also have a Middle Eastern BFF who won't eat pork even though she's a Christian as well. But she won't eat sheep/lamb, either, since she's not into fatty or game-y meats.

    @@doodahgurlie Sorry for replying late but Muslims are strictly prohibited in ISlam to eat pork....we dont even touch it. As far as sheep goat cow and chicken we are supposed to eat only "halal" meat which is slaughtered meat with prayers on it. NOW that being said there are some strict Muslims who only eat at Muslim restaurants that offer halal meats in USA or any other country....and then there are some more easy going Muslims who will eat chicken lamb beef at any place Halal or not...P.S Muslims are allowed to eat Kosher meat which is a jewish meat in case HALAL is not avail. HOWEVER middle eastern who are christians or orthodox or any other religion are free to eat whatever they want. So sum it up Muslims(Traditional)-PORK IS ABSOLUTE NO NO, they are allowed to Eat all other meats provided that they are HALAL or Kosher, non traditional muslims dont eat Pork at all but they sometimes eat at non halal places like western restaurants or pretty much every [place in America.

    @@EatPrayShop No, I understand that Muslims don't eat pork, which is why I find it curious since pork is used more than any other protein in Vietnam and other similar Asian cultures, but you mentioned you were obsessed with it. To me, obsessed is odd coming from you as I did assume you were Muslim and not of the Christian variety. I would think since pork is so heavily featured, being Muslim, you'd be missing out on a big part of the cuisine by not eating pork. There of course are other alternative meats that can be used to substitute for pork, but pork makes some of the most famous and delicious dishes in Vietnam.

    @@doodahgurlie yes ur correct , as a matter of fact in our religion we don’t even like to take the name of pork let alone touch or eat it. Now if someone eats it by mistake or unknowingly they are forgiven but intentionally eating pork is an absolute no no. I don’t touch pork since its something that we grow up with and have been raised to practise restrain. There are other proteins in Vietnamese food which make them great. So yea

    Wow, I worked in a Vietnamese restaurant and the Nuoc Cham sauce was to die for. I would put 2 servings onto my noodle salad bowls whenever I got them. I’ve been wanting to make noodle salad bowls again for my lunches at my new job but the Nuoc Cham is everything to me. I need it if the bowl is going to taste right 😂 I never got a chance to learn how the restaurant made their own Nuoc Cham before I stopped working there, so it’s Great to know that it’s actually not that hard to make!

    Quick, simple and easy what other words I can describe your recipe...... pairs well with most of viet dishes even spring rolls for those who are allergic to peanuts...quick question Andrea, do you think it works with palm sugar 🌴 and even stevia for making this vietnamese condiment dipping sauce???? Or is it ok to use Lemon Juice instead of Lime juice????

    How long can you keep this dipping sauce for in the fridge? A week? Ive tried this sauce in a restaurant with deep fried spring rolls and it was so good! Im gonna try this recipe and eat it with some salad rolls 😁 I got some random fish sauce so it probably wont taste like the restaurant. I dont live close to an Asian market or store. I just got one by Thai Ktchen...i don't know what good fish sauce tastes like lol. So we'll see how it turns out 🤞🤞

    That is so true! Sauce is the key to most of vietnamese food. We are always disappointed to eat bo bun here in Singapore. They use the chili sauce. Eww! And this is easy to make.

    Yes you can I use it when I dont have lemon lime and it taste just as good. Any light vinegar will do just don't uae a dark vinegar like balsamic.

    Several weeks when using lime/lemon; however sauce can last for several months if using vinegar.

    You can dip Vietnamese fried spring rolls, all kinds of Viet dishes where you wrap it in greens first (i.e. banh xeo, banh khot, the fried spring rolls previous mentioned, the fried shrimp and sweet potato, fresh spring rolls, etc.). Or it's tossed over things like noodle bowls such as bun thit nuong and similar Viet noodle bowls, use it as a salad dressing (popular in the Vietnamese cabbage and carrot salad, Viet style papaya or mango salads, etc.), use it over broken rice dish like com tam, etc. It's used in EVERYTHING. LOL! If you're really true to tradition, you'd make slightly different sauces with different combo of the ingredients (or if your TRULY traditional, you'd also make other types of dipping sauces such as the one that uses pineapple and/or shrimp paste, etc., ... Viets love sauces/dips!), but my mom was lazy and uses just one recipe for everything we eat. :)

    @@raniayacoub1770 You can try grilling or frying some protein (fried/grilled pork, fried fish, etc.) that isn't already strong in Western or other ethnic flavors then use the flavored fish dipping sauce with it. Maybe cut your protein into bite sized pieces add put it on top of rice then douse your protein and rice with the sauce. We eat lots of cucumbers with everything, so you can slice cucumbers to eat with your protein. Check out Van's Kitchen (the videos from about 3-5 years ago), Aimee's Cooking, Helen's Recipes, Chubby Whale, etc.

    Rub your hands together with little oil after dealing with hot peppers and it will remove all the heat causing substances...Just do a wash after and you're good

    I made it according to your recipe on splendidtable. It was horrible! Way too much Lime juice. 1/3 of a cup ruined the whole mixture and I wasted half a bottle of expensive fish sauce!

    LOL Okay another chef that thinks that pepper seeds are spicy! SMH Andrea, there is zero capsaicin in pepper seeds. The most capsaicin is in the pith that holds the seeds which is why people like yourself get confused.

    Regardless of your spice tolerance, no one enjoys accidentally touching their eyes after chopping hot chilis...not wanting to touch chilis when chopping isn't a sign of not being able to handle heat.
