Today I'm sharing all the plant-based breakfasts, lunches, dinners, snacks and desserts I ate over the course of a week! I'm an active mom of 2, currently living in Malaysia. I eat intuitively to feel good and have lots of energy. Oh, and if you can't tell from the video, I love chocolate. But I also love veggies too. Hopefully you'll get some meal inspiration. TUESDAY:

Chocolate Blended Baked Oatmeal without Protein Powder:
1/2 ripe banana, mashed
2 tablespoons aquafaba
1/2 cup oat flour
2 tablespoons cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon coconut sugar
pinch salt
milk to thin
Bake at 400F for about 25-30 minutes

THURSDAY:
► Green Tea Lemonade
1/2 teaspoon matcha, dissolved in hot water
Juice of 1/2 lemon
1-3 teaspoons sweetener
water and ice
► Veggie Biscuit Bake:
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, chopped
1 medium zucchini, chopped
1 small head broccoli, chopped
3 cloves garlic
salt and pepper
1 can beans, drained and rinsed
2 tablespoon flour
1/4 cup water (optional)
1 vegan biscuit recipe.(www.simplywhisked.com/drop-bi...)
Sauté all the veggies and garlic until softened. Season with salt and pepper and Italian herbs. Stir in 2 tablespoons of flour and some beans and allow the mixture to thicken before pouring it into a greased 8x8 baking dish. Top with vegan biscuits. Bake at 425F for 20-25 minutes.

Omgsh I've been eating rice cakes with nut butter banana and cacao nibs for a while now too!! But I also add cinnamon and sometimes sunflower seeds because I'm obsessed with the sweet and salty combo 😂 I don't have to hide to eat snacks because unfortunately my 2.5yo son is such a picky eater and eats like 10 things only, he's never interested in my snacks! And my 9mo little girl is too little 😂 I love so much about this video, and all your videos, I love your realness and honesty about mom life and doing all the things. I felt your panic about your poor son hitting his head and the relief that he was ok! You're about 1000% more productive than I am 😂 so I love your videos for meal inspiration but also life inspiration, I've been wanting to copy your routine of getting up before the kids to do things for myself, like workout and have some peaceful time, for a long time so maybe one of these days 😂 I also admire how active and social you keep your kiddos. And I love the opening the oven with the foot, you gotta use any limbs you can 😂😂😂 Love love love 💖💖💖 thank you for sharing!

Such an amazing video! I’m not vegan but I’m definitely going to try your baked oats, sounds delicious. I don’t usually crave for sugar in the morning, but I’m sure it’s going to be awesome for dessert. It looks like a super sweet breakfast, but sometimes I don't even add the teaspoon of coconut sugar and it's not sweet at all. Hope you like it!

I wake up, work out, get my daughter up and ready and fed and then I have a roasted dandelion tea (coffee alternative) and then get to my first meal in between 9-11. Luckily I’m not someone who is hungry first thing!

Seeing that chocolate oat bake with a heaping spoon of nut butter that many times honestly gave me life it is a meal I would totally eat every day too!! ps I'm the same with fruit unless it's for breakfast. Idk but I can eat a piece or two of fruit in the morning and I'm full and good for hours but eating it during the day makes me hungry too!

I honestly only like it super hot right out of the oven as it gets gummy. But if you don’t mind that, then yes! You could also check out the healthy chocolate breakfast muffins on my blog. I make jumbo muffins and they’re basically single serving chocolate cake ☺️

I eat breakfast after my kids go to school. I like a quiet breakfast to myself as well and with my health intermittent fasting is helpful so eating later works. I like that i can just concentrate on feeding them, making lunches and getting them out the door.

I used to hate Zucchini too but since a few wegs ago I almost eat it daily, a coworker traded some with me against plums from our garden and it's so nice to have. And I don't have kids but I usually get up, drink a huge bottle of water, do my workout and then have breakfast. It varies between porridge, overnight oats and baked oatmeal right now. After that I head out for a walk with the dog and get on the bike to work (as long as its warm and bright enough to do so).

another way to use zucchini that I have seen on some other sites: make a zucchini bread or chocolate zucchini bread; one great idea was to bread a long thick zucchini slice and pan fry it, then put marinara sauce on it with spices and cheese/nutritional yeast...dts/usa

You are not alone in sneaking a snack sans kids! I’ve def quickly chomped on a cookie standing in the closet or bathroom once or twice. My little sleuth can generally suss out what’s happening though… I must come out of looking like the cat that caught the canary- “mummy! What were you doing? Let me smell your breath for chocolate!!” 🤣

The oatmeal looks delicious! And I like zucchini but lots of squash makes me daughter gag too and she’s a really good eater haha I make her have a few bites every time we have it and she’s getting better. Definitely the less cooked, the more acceptable for her 😂 I’m impressed you keep your nightly chocolate to 1 square! And I need to start getting up early before my baby because I’d like to eat before my kids, too 🙂

I think my daughter isn’t so grossed out by it anymore either. We’ll see if she ever chooses to eat it! And I can stick to just one square of chocolate because I eat a massive bowl of chocolate oatmeal for breakfast most days!
I eat my breakfast before my husband and children wake up. Every morning I have choc/banana/peanut butter overnight oats with a strong green tea!

I would love that but oddly can’t find either of those products here! I did remember that I learned how to make tempeh so I should try that out again with different beans!
The chocolate oatmeal sounds amazing! I am allergic to chickpeas, can I replace it with a flaxseed egg or what would you recommend? Thank you so much for all the chocolate alternatives. I am a chocoholic too and a healthy option is such a great transition into a sugar-free life!!

Oh interesting! I haven’t tried a flax egg in this recipe actually cause I was scared it would be too gummy but it’d be nice to get more flax in in the morning. I’ve found the aquafaba in white beans works pretty well too so you could try that! Or just omit it and do more milk and add a splash of vinegar and a pinch or baking soda…
Great video as always!!! 1. There is no such thing as too much chocolate especially when it’s a wonderful New Zealand trusted brand like Whittekar’s 2. I’m not a super early Riser and eat breakfast in bites between while walking back and forth getting the kids ready for school! 3. What about Mexican or middle eastern inspired food to change up the flavours? 4. Pretty sure cashew or almond butter would work for a satay? Might need to use coconut aminos or something for the “soy” element :) 5. All about hiding in the kitchen for my snack so no one steals it lol, my other trick is to say it’s really spicy 😂

Love all of these tips/comments! Yes, we’ve been doing lots of Mexican and Italian too. I just happened to film on a Mediterranean week. But I should try middle eastern! And you seem to have your hands full as well. Glad to have other who can relate!
One more suggestion.. what about coconut aminos to create your Asian food? Here in the states there’s many varieties like teriyaki, bbq, etc.

I can't find it here for some reason! I'll probably have to buy a super expensive bottle on line. I also plan to make my own tempeh with different soy-free beans. We'll see how that goes!

So glad you enjoyed the video! And I can’t believe I forgot to write that down! I usually bake the oats for about 20-30 minutes at 400F. It really just depends on your oven and how much milk you add!

What a great video Faith, I've been vegan for years I lost count, its great seeing new foods to eat. Food prep is mandatory in my home to eat healthy and full. I was wondering if the groceries there are good etc. and do you have a language barrier?

Meal prep really does make this lifestyle sustainable! And in general, there is no language barrier, which is a big reason we chose to live here! And there are so many options for good food!
Can you get coconut aminos? We use that instead of soy sauce in a lot of our Asian inspired dishes.

I keep looking for it but haven’t found it yet! I used to use a black bean soy sauce but that seems to be elusive as well. I’m gonna have to check out a health food store or something!
You definitely don't eat too much chocolate! I know you love to meal prep but could you do some more that you can freeze that way you can increase the variety. A staple in our house is daal and rice which we freeze (rice defrosts perfectly) and then can serve with a fresh salad. We aim to always freeze a batch when we make things freezer suitable and then you don't have to eat the same thing for too many days in a row.

Think about growing some kale from seed on your balcony! For a couple bucks you can experiment with some seeds and see if it turns out! 😉

Great video! I like your haircut. You look happy and healthy. How did you figure out that eliminating just soy and pb from your diet would help clear your skin? When will you reintroduce soy and pb to see if your skin can tolerate? Yes to more clips of life in Malaysia. How much does housing cost there?

Thanks for watching! I’m going through a natural online acne program and soy and pb (along with other foods) tend to affect people with genetic acne the most. So I’m eliminating everything for a time to clear my skin and then will slowly reintroduce them to see which ones affect my skin personally!

Yep! And I think I use to drink an entire blender-full of green smoothie for breakfast. Not anymore…oatmeal everyday!
Great ideas and video! ❤ Do you think you’re getting around at least 45g of protein each day? I think when I was vegan that was the bare minimum to not lose too much muscle. I’m trying to build more muscle so now I do almost double that, but I do eat meat now. Just curious, thank you and please keep up the great work. ❤

Have you tried coconut aminos?? They are a non-soy soy sauce, teriyaki sauce, etc... I can't have soy either and couldn't live without it, hope it helps for you :)

Not much longer...maybe 3 weeks? And i'll be trying to add it back in as soon as I'm aloud to see if it's one of the foods that affects my skin. Hopefully not! And thank you!
Use sunflower butter in place of peanut butter. I can’t eat peanut butter and find that’s it a good sub. Oh and my daughter gets horrible acne from peanuts, artificial sweeteners and milk.

I’ve been doing cashew and almond butter but I should try out sunflower butter again. It probably is most similar to PB! And glad your daughter know which foods affect her skin. That’s so helpful!

After the 4 month program is up (which is about how long it takes to clear genetic acne) then I can slowly start incorporating foods back in and just see which ones cause breakouts!
I dont know how this is legal to eat on a low fat high carb whole food diet but Im eating that oatmeal thing everyday until I am good and tired lol. I make a batch of 2 and air fry the other side the next day. This was awesome

I thought about it but I feel like zucchini never holds its shape very well. But I should still give it a go! I may try zucchini fries coated in bread crumbs or something too!
