i would work 7 days a week for saki. i know what it's like to work for people who think of you as nothing more than a name on a list. seeing the notes of appreciation on her employee's paychecks and the champagne toast at the end of a good service really hit a special spot in my heart. all love and best wishes on your success saki! being able to eat at your izakaya one day would be nothing short of an honor.

This lady is really grateful about what brought her to be able to live her dream, including the people surrounding her that also give 100% of themselves in this hard work. It is really beautiful to see. May this restaurant prosper and this owner get the endless reward of having happy customers. Considering how much heart is poured into this, I wish for it to be an endless success that will go on for generations.

Love and kindness make everything better.. the fact that she takes the time to write on each employee's salary envelop a personal note might seem like a little gesture but hides a ocean deep level of sensibility and spirituality. May the universe smile back at you every single day Saki.

As a westerner the thought of eating chicken sashimi is definitely a barrier I'd need to overcome. That said, the dishes here look phenomenal! I wish Saki all the fortune and prosperity in the world, which she clearly deserves. It takes courage to open a restaurant with no experience and she looks to be nailing it! nicely done!

Same thing, the chicken we have at home is really not intended to be eaten as sashimi. It's not fresh enough, and I can't stand the smell until it's cooked. To make sashimi you need extra extra fresh chicken, and be sure of what quality you have or risk ending up in the hospital (salmonella, campylobacteria, etc.)... Not that easy on my end =$.

@@MyRealName I agree, but that's no reason to take just any chicken. Extra fresh chicken will always be more likely to be edible raw than chicken found in the supermarket. Between a chicken where you normally won't have any problems and a chicken where you are almost certain to have problems, the choice is quickly made... Afterwards you do what you want, it's your health not mine :).

Even the freshest cage free organic chicken couldn't(and shouldn't) be served like that where I live. Honestly though this seems like a very lovely restaurant and people are obviously not getting sick all the time from the food, so they're doing right with the ingredients they get. But yeah, the thought of chicken sashimi really does gross me out.

They probably just flash freeze the chickens the same way fish is processed for sushi, aged and flash frozen, thawed for use as raw sashimi. Direct from the water fish as you usually want to dry age the fish a day or two to help deepen the flavor.

Humbling and greatful are the first things that popped up. When I saw that she had hand written messages on pay envelopes that really shows she appreciates her staff and is greatful for standing beside her to help her chase her dream. What an inspiring place to work. Great food, great people and always smiling that right there is true happiness.
