TURKEY BURGERS & ASPARAGUS
1 lb ground turkey
1 medium zucchini, coarsely grated
1/2 cup chopped herbs of choice (parsley, mint, cilantro, scallions)
Salt & Pepper
1 bundle asparagus
1 red onion, thick sliced
Olive oil
1 cup tahini paste
1/2 lemon juiced
Heat oven to 350.
Mix the grated zucchini, egg, herbs and ground turkey in a bowl. Season with salt & pepper. Shape into sliders.
Heat up non stick pan over medium high heat. Add olive oil. Working in batches, brown burgers, 1 minute on each side. Transfer to a sheet tray.
Once all burgers have been browned, place in oven and cook for 7-8 minutes or until meat thermometer shows 160.
While burgers are cooking, season asparagus with salt and olive oil. Grill on high heat for 2-4 minutes, depending on thickness of asparagus. Repeat this process with the onion slices.
In a separate bowl mix tahini paste with 1 cup cold water, lemon juice and salt to make tahini sauce.
Plate asparagus, top with burgers, grilled onions and a generous drizzle of tahini sauce.
