Probably a mix of black and blue with a little red. That's all you typically see in the USA. If you are asking about ratites or if it's a Emu or Rhea then your on the wrong path. This is an ostrich.

I'm interested in this but my concern is the lack of processing plants for ostriches. I mean Emu farming was a fad in the 80's and all those guys went bankrupt.

Ostriches have what is believed to be the strongest immune system of any animal on the planet. They really don't even get sick!
