We're spending a few weeks in our Denver home and missing our Metro Manila home, so we decided to try to cook up some iconic filipino dishes ourselves. After our meal at Manila Bay Restaurant in Aurora, Colorado, we know that there's great pinoy food outside of the Philippines, but can we pull it together on our own? Let's find out.

    I was in the US Navy for 20 years and a lot of people probably don’t realize that like 10% of the US Navy is made up of Filipinos. I grew up in the midwest and the Navy was my first exposure to filipino food & culture. I love it! Thanks for sharing your adventure trying to make it. You’re motivating me to try!

    Try the easy Tinola Manok, sauté onions, ginger, and garlic for about 2-3 minutes, followed by the chicken cuts, sauté for about 5 minutes. Then pour in chicken stock or water salt and pepper to taste, boil for about 5 minutes until chicken is cooked. Add in basil leaves or moringa leaves (malunggay leaves). happy eating. dipping sauce to partner with the chicken tinola, patis, and calamansi. yummy. Don't forget the rice. Pour some oil to thicken your adobo sauce. soursop is Guyabano fruit

    Im still trying to replicate my grandmothers adobo recipe she made a really good version hoping when I go back to my province in Leyte I’ll watch my aunt make adobo so I can learn

    Hooray 🎉! The family that cooks and eats together, stays together! Reagan’s first appearance in LTP channel is it? I think Erin’s adobo looks yum! There are actually many variations of adobo, and depends on your likeness. Some will cook it as pork, then let the gravy evaporate until it is dry and fry the pork with additional oil. On your version others may also add some boiled egg it in or potatoes or even go for both chicken and pork on it to give more variation and texture on the adobo. I like my adobo with tomatoes (my moms version). Wow kids are amazing too with their chef like skills! I adore how their tastebuds and olfactory nerves are spot on. ❤

    Good job guys! Some of my own personal tips. You could marinade the chicken like a rosemary chicken just to add flavor to it along with worcestershire sauce. If u do pork adobo, try to brown it in margarine or butter instead of oil. Next, I noticed u didn't dice any onions. Most filipino dishes that have a sauce start with sauteing onions then garlic. If u don't want the meat to be too salty, don't season the meat with salt anymore as the soy sauce is salty enough. Lastly, the use and proportions of soy sauce and vinegar is according to ur personal taste. I personally do half a cup to a cup of soy sauce depending on the amount of meat then add vinegar by the tablespoon according to my preferred sourness :)

    Noo this is americanized. Soy sauce , coconut vinegar (tuba), garlic, black pepper, garlic, onion, and bay leaves. Filipino cuisine dont use things such as rose mary, Worcestershire, and butter.

    Erin's Adobo is pretty much her version of Adobo. She actually did a good job because you can't really go wrong with adobo at all. There are so many different types how you want them to cook it as long the similarity taste is there then it's adobo hehehe. This is actually very entertaining how you guys learning the recipes of what you've eaten in Philippines. I say keep it up and do more of this when not traveling.

    You can make an extra large batch of adobo that you can use for different meals all throughout the week.Also for busy people,no time to cook,just reheat it in microwave, topstove. It can last up to 4 days in the fridge because of high acid content of vinegar and salt(sodium) for preventing the spoilage causing bacteria.

    Yes, it's crispy pata the deep fried pork knuckle part and lechon kawali the deep fried pork belly. The actual lechon is the whole pig roasted on a spit and the best version i've tried is the cebu lechon variant. And soursop is locally called guyabano.

    You can cook in the rice cooker of rice like 1 cup of rice and 1 cup of water. Or in stove 1cup of rice to 1 cup of water. Put in stove in low heat. And it will cook absolutely good!

    Rice cooker not needed to make white rice. Simply use a medium-sized sauce pan. Pour in whatever amount of rice you want (I typically just eyeball to about half the height of the pot). Rinse and drain the rice a few times in the pot with water over the sink. Then add water. Use your ring finger to measure the amount of water (the first line on the ring finger to the level of the rice is the perfect amount of water). Cover and put on medium/low heat for about 20 minutes. I tend to add some butter on top once I remove it from the heat and let the butter melt and fluff it up before serving.

    Hello Lockwood Family! I’ve been watching all videos and this episode is incredible. It’s nice to see the family cooking together, one tradition of a Filipino family is to cooking together. I could recommend The Filipino Instant Pot Cookbook, one of the writer is my niece. Its one of the best selling cookbook in Amazon.

    Vinegar should be the last. When the meat is tender and just simmer and don’t stir. And it’s really for preservation purposes. If you put too much vinegar you can add sugar to balance again the taste.

    I’m feeling proud of your love for the authentic Filipino taste. It’s flavorful and differently interesting. It’s global food fusion of Latin hispanic, Chinese, Indian with ethnic fil twist in it. Great job Erin and kids.     Strictly for chicken adobo you have to add at least 1 teaspoon of smashed peeled ginger. It will ad a nice taste and will smell much better. Also for every 3 pounds of chicken or pork it should be 1/4 cup of soy sauce and 1/2 cup of vinegar. More than soy sauce than that it wil be super salty. You must render the sauce until at least 2 inches from the bottom so the sauce is thick and tasty. And the meat is peeling off the bone. Eat and enjoy

    Ayo! Adobo! I say you found an honest to goodness recipe there! Adobo is that recipe that differs from town to town, family to family (and from person to person). Mine has a 3:2 ratio of vinegar to soy sauce, as well as sugar and everything else in your recipe. Instead of braising, I just throw everything in one pot, cook covered for 10 mins and then cook uncovered for 30 mins for a dark adobo with an almost syrupy consistency. I like cooking adobo because I can prep it the night before; I can just let the raw chicken marinate in the fridge overnight and cook the next day. The best part: It can keep for a week without being refrigerated if cooked well. I didn't hear you mention this, but Filipino adobo is a native meat cooking and preservation method; it predates Spanish colonization. It got its modern name after the Spanish noted how they "adobar" the meat. There are a lot of variations of Filipino adobo. While "adobong itím" (black adobo) is the classical recipe, the modern recipe that's closest to traditional is "adobong putî" (white adobo), which swaps out the soy sauce (introduced by the Chinese) for locally-available salt. Other recipes include "adobong diláw" ("yellow adobo," has turmeric), ""adobong pulâ" ("red adobo," has annatto-seed soaking-water) and in coconut milk. Other proteins you can adobo other than chicken are pork, pork AND chicken (in the same pot), squid, tuna, and beef. String beans and water spinach are popular for vegetable adobo. Finally, some people like it saucy, while others like to reduce the sauce until it dries out. For your next Filipino meal, I recommend "nilaga," a soup that's also good for beginners to Filipino cooking; you just throw in prepped stuff at stages and remove the scum while it all boils into a soup.

    Okey I got some tips for you how to cook really really good some adobo, just marinaded The chicken first Soysouce, water vinegar put some brown sugar two spoons bay leaves minced a lot of garlic black pepper marinade the over if you want really taste good believe me all my American friends loved it when cook at work braised the chicken for 20 minutes and then save some souce and then sauté the chicken again with a lot of garlic for 10 minutes and put the rest of the souce into the pan and it’s ready to serve and the best things is to have a garlic rice and that’s a really good partner of adobo.❤

    the kids are (if not already) gonna be thankful for these experiences and memories you've been able to make with them, travelling around the world and seeing how life is like for different people, sometimes not even visiting other countries in the usual tourist style pre planned package type thing but raw, real adventures, it will really enrich them and expand their worldview unlike many other people whove only ever known the one place and never been able or had the chance to see the world. makes me somewhat jealous that i didnt get the chance to be part of a family like yours

Ugh! 😖 So, I guess, ur fam *NEEDS* to live in a place where y'all would have easy access to a pool (or a beach) here, huh? 👌🤗

    The way we cook adobo is Easy... Get some meat (any meat will do) wash and Dry In a container (Ziploc/Lock&Lock) add the meat, vinegar, Soy sauce, Crushed Garlic, Crushed Pepper corns, Bayleaf, a lil bit of sugar(asian taste palette). Marinate Overnight then cook as it is. You can also sear the meat before cooking. Then simmer to reduce. And you can add slurry to make it a bit thick. Serve over hot steamy rice. I love it with fried garlic and onion chives/spring onions/leeks on top and paired with Rootcrops like boiled Cassava or Sweet Potato. ❤ Enjoy

    Adobo in my region has a sugar in it so that will balance the taste of sour & salt. Also try to make & cook lumpiang Shanghai for sure you will love it too! 😂😂😂 im Filipino watching here from Switzerland.🥂

    How i cook my adobo is much more simpler and quick... saute garlic, onions, chopped red chili along with the chicken till its brown then add 1 cup water and bring to a boil till half of the water has evaporated then pour in the soysauce and vinegar per your taste, add a half teaspoon of sugar and salt per your taste and bring to a boil again till almost half of the water and soysauce have evaporated!

    there's also lechon kawali which is really easy to make. just have to boil, let it dry so it doesnt explode when you fry it, and then fry. there's lots of videos on youtube how to make it. learned it from "taste to share ph" channel.
