Speaking as a former baker and current pizza shop owner, this guy’s output and variety is incredible. He is a master of his workflow. And the doughs and products look great. Baguettes had nice color and shape and cell structure.

So enjoyable to watch a master baker apply his craft so skillfully. From the time he starts work at 2:30am until the morning (9am?), he is preparing and baking non-stop, no time is wasted. The productivity and variety is amazing. The tiny little olive buns are very interesting! I would love to try one of those mini pizzas and the giant double-decker sandwich! Wonderful bakery.

Мне панравилось что все на старом оборудование, а то новые такие дорогие, что никакой выгоды их покупать мелким пекарям,так уютно и хорошо, одно удовольствие смотреть

amazing baker, he's doing it by him self for while finally I saw the helper came maybe after 8am. wish I could help him. I love baking. I was in Tokyo several years ago, their stuffed bread was amazing. I got there right when they just open. I go there every morning for seven days. same thing at other shop selling mochi just next street. so good and fresh. It was awesome.
