Ok I just have to tell you something and I hope you’ll be able to see and read this because your video just got uploaded: I’ve started baking recently and your videos have been an ABSOLUTE GODSEND on my baking journey. Every single recipe of yours that I’ve made has turned out perfectly every time, in large part due to how thorough you are in explaining not only what should be done, but what pitfalls to avoid as well. Through your videos I’m finally getting a sense of the true science behind baking and it’s making me more confident as a baker. I truly appreciate everything you do, and I love watching your videos because it’s so apparent that you have a real and deep love for your craft! I agree I went to new york school of culinary back in the 80's I haven't really dabbed in my skills in years and normally I would bake cakes for my kids from the box and since last year my son said he wanted me to go back to my college cooking and baking days and make a cake so I tried looking at recipes on YT and found Preppy and never looked back now my kids are grown and they yell at me "MOMMY EVERY TIME YOU WATCH PREPPY YOU GET NEW APPLIANCES YOU HAVE NO WHERE TO PUT" Guys this is true!🤣I love you and your family John Thanks for helping me get back into my Passion.

If you don’t have matching baking treys you can just take a fork and puncture as many holes in the pastry as you can and bake it without covering; it won’t puff up either 👌🏻 Love your videos John
A favorite in Colombia, we call them “Milhojas” and use Arequipe (dulce de leche) to top it 😄

You can get frozen passion fruit puree at most Latino grocery stores. It will save you some time.

You mentioned being able to freeze egg whites. Would they be suitable for Swiss meringue buttercream after thawing? I know SMB can be a little finicky sometimes, so didn't know if freezing the egg whites would affect the ability to whip properly. By the way, I look forward to checking KZread every day to see if you've uploaded something new. I love your cookbook, but I still find it so helpful to watch you bake something first before diving into some of the recipes. But seriously, everything I've made from the book has come out beautifully. Thanks for sharing with us!

John, I've never frozen Egg Whites 🤔.... could you please tell me what the "best" way to freeze them? ....This also, is a "New" Recipe for me🤔...and yes, I Love ANYTHING French 🥖 and I also love "Creamy & Crunchy!"😁😉🩷🩵

I can make most of the recipes ,pies cookies and savoury recipes.however my cakes and dense and heavy in the centre I have thrown out so many products trying to get this to work for me. Could be many things The oven temperature might be off significantly Your leavener went bad somehow You don't fold in egg whites properly for sponge cake But maybe you just live somewhere with different humidity/elevation. Seems to be the most common reason there is...

John, I have a favor to ask. I have tried making a raspberry flavored pastry cream twice, unsuccessfully. I know it can be done (I've seen bakers do it on the baking challenge shows on Food Network) but both times I've tried it comes out tasting like rotten milk. 1st time I tried I put the puree in with the milk. Yikes! 2nd time I did it the way you just did. Again, Yikes. Can you please, pretty please, create a raspberry pastry cream for the ch? Thanks for the French whisk tip. Now it's the only type of whisk I'll use when making a pastry cream or a filling for a cream pie... 👍
