You saved me a comment. I saw a number of things that were questionable, but the hand in the raw meat! I'm a trained hygienist and as such, I had a physical reaction. Contamination must be rife, and personal hygiene has to be a priority, evidently, that's not the case at this plant.

I dont know if youre old enough and i dont even know if youre in the US, but here when Jimmy Dean sausage first came out years ago it was promoted as being made from all the animal flesh. That implies there isnt extra fat in it, just what was there at the time of slaughter. Who knows if any organ meat was included or not, and if the original recipe is still used as was when he still owned it. Since then however, many other varieties were introduced which include poultry. There again it might be difficult to determine if any organ meat is used. What ive found to be disappointing though is that its a challenge to find JD pure pork sausage without poultry in it. There was even labeled Traditional or some such that wasnt all pork! Wtf? Complicating things is that some stores keep sausage in more than one place. Theres a frozen breakfast section where they keep some of it, and also in the meat department where the unfrozen sausage is kept and is where the only pure pork sausage is kept. You have to read each small print label to know if it has poultry or not too. Sometimes i wish i was a homesteader to grow my own food. One problem is i cant find any bacon seeds, so that ends that!
