Yeah, I can't afford a zester at the moment. I used my serrated knife. It did a pretty impressive job! And you're right, an extra spoon of lemon juice works just fine! Happy Baking!

Hi John Thankyou so much for your entertaining videos and awesome recipes. Just a question i made the lemon cookies and when i added the lemon juice to the butter/sugar mixture it curdled ☹, i added the dry mixture and just going. I wondered though why it did that, is there something i did wrong?

HI john By lemon paste , do you mean lemon curd ? Because I tried replacing eggs and a little butter by some of the lemon curd in spritz cookies and the results were really good

I have a shortbread cookie recipe where you infuse the sugar with lemon zest and it smells and tastes wonderful!

What I do when I make a recipe similar to this, is pulse some freeze dried raspberries in a the food processor and mix them into the glaze. I call them pink lemonade cookies.

I made these yesterday and they are the best lemon cookies I've ever had. Sometimes I just want a fully soft cookie and these are perfect. I didn't have lemon paste or extract so I added about an extra half tablespoon of zest and it still had a strong lemon flavor. I also mixed the sugar and zest together really good, let it sit and infuse while i put the other ingredients together and that worked perfectly. I'm a new subscriber as of a few days ago and I'm hooked on your channel. You're excitement for baking is what I love and exactly how I feel about it. Looking forward to more videos and trying out more recipes.

These lemon cookies are delicious. I made them for Christmas this year. My husband, son and I eat all of them. I made two more batches one for us again 🤣 and one to take to work. I also made your Ricotta, short bread, butter, and oatmeal cookies. Double batches of all. One for home and one for work. My co-workers hunt me down to tell me how good they were. I’m now called the cookie lady at work. You are a brilliant baker. I have been baking since I was 12 now 50. You’ve introduced me to knew tricks and better ways of doing things. You are a joy to watch. Thank you for sharing your talents with the world. I’m now looking at your pound cakes to try. 💕

if you're afraid the lemon glaze will make it too sweet, just reduce the ratio of your sugar in the cookie dough

I love lemon anything. Made these & dipped each cookie. Then let glaze set & colored remaining glaze with a bit of yellow coloring, added a little more sugar to make the paste thicker, then drizzled yellow bands across each glazed cookie. Yummm!

I always love lemon flavor Desert. I made a lemon bars cookies a few years ago that used lemon zest from three lemons, plus the juice from those same three lemons, plus on top of that I a tablespoon of lemon extract. These were so lemony that they made everyone pucker a little bit. They were sure good.

I just made these cookies here in the UK and made them gluten free and lactose free by substituting the flour for Doves FREEE plain flour plus a teaspoon of xanthan gum and substituted the butter for Flora Plant butter. They baked up really well and are absolutely delicious (even without the lemon extract which I didn't have)

I've been making these with preserved lemons instead of the normal zest lately, and adding an extra sprinkle of them on top before going in the oven. Gives the cookies a bit more depth of flavor and texture. Worth a shot if you have any sitting around.
