Yes, use both heaters, Blossom. My oven does not have a fan. But if yours has one, the baking time could be 2-3 minutes less. And thanks for wanting to try out my recipe.

Many thanks for your appreciation, Shirley. Yes, you could use melted ghee in place of butter. But no, you cannot replace maida in any bread recipe with whole wheat flour unless you add what is called vital wheat gluten to the atta. That is because, whole wheat flour forms very few gluten strands, not enough to make the dough rise beautifully. You could order vital wheat gluten from amazon and for every 2 cups of whole wheat flour, mix 1 tbsp of vital wheat gluten into it. Without adding this, any buns / bread you bake with whole wheat flour will be dense.

If you soak the raisins first, Ursula, they'll plump up and become softer. I like to soak them first. But you could also add them directly to the buns dough like we do in cake batter.

Rita, you have to start the oven in the convection mode. (In this mode, it functions like a regular oven.) And then like I've mentioned in the video, set the temperature to 170C (350F) and bake the buns for approximately 20 minutes.

Hello ma'am, since tomorrow is Good Friday, I wanted to bake buns today. I've gone through so many recipes but I somehow got satisfied watching yours, hence I'll be trying yours today. But just a query, I do not have oranges with me, what to do?

Hi Samira! Thanks for deciding to try out my recipe. If you don't have oranges, you could add 2 tsp of orange marmalade instead, and if you don't have that either, you could add the rind / zest (only the yellow part of the skin) of sour limes. Carefully scrape off the white pith on the underside of lemon peel, and then finely slice just the yellow part of the skin that's left. And if you think you won't be able to add even lemon rind, just skip it. But the orange or lemon zest adds a slight citrusy taste to the buns enhancing the taste even further.

Thank you so much for your appreciation. Yes, it can be baked on a gas stove, but keep the heat on low while baking the buns. And yes, you could skip the egg. But then you will have to add a little more milk to bring the dough to the right consistency. And also, you'll have to knead the dough a little more as the egg also helps to make the buns rise more easily.

Egg acts as an additional raising agent and also adds to the taste. But you could skip it if you want. And by the way, eggs are allowed on Good Friday. Only meat is prohibited.

Buns made with only atta won't rise and become fluffy because atta is not as elastic as white flour (maida) and forms less gluten, a substance that is essential for helping bread or buns rise and puff up. If you want to make buns with only atta, you will have to also mix another ingredient into it called Vital Wheat Gluten. This is available on amazon. For every 2 cups of atta, you have to add 1 tbsp of Vital Wheat Gluten. However, another option would be to make this same recipe with half white flour and half atta. The buns made this way will be light and fluffy but a little less fluffy than buns made with maida.

Easow, you could use allspice powder which is actually a mix of ground cinnamon, nutmeg, and cloves. Or else, you could drop both cinnamon and nutmeg in my recipe and use only ground cardamom.

Ursula, 1 measuring cup is 240ml. But 2/3 cup is 160ml. If you have a 1/3 cup measure, then fill this twice and use it to get 2/3 cups of milk. If you have a 1/2 cup measure, then add this 1/2 cup + 3 tablespoons to get 2/3 cup of milk. Hope this helps.
