南海飯店さん40年位前かな当時は上六のホテル街近くにビル1棟3。4階建てだったと思います 当時本格中華は珍しく大盛況。南海飯店さん行けることがステータスでした 小学生だった私も大興奮。海老の天婦羅は衝撃でした お陰で今私も料理人です 今もあの海老の天婦羅が食べたくてたまに寄らせてもらってまず
炒飯、豚角煮、春巻き、木須肉、ネギチャーシューメン、餃子、酢豚、焼きそば、皿うどん、海老マヨ、ラーメン、麻婆豆腐、中華丼、ネギラーメン、焼き豚、ワンタン麺、担々麺、焼き飯、八宝菜、美味しそうですね。
完全に 中華のエキスパート勢揃い ほんまもんは見てて気持ちいい 尊敬します。

ここはいつ行ってもおいしいよ。おばあさんなっても、主人と懐かしく行きます。
毎度毎度、よくこんなに美味しそうなお店見つけられますね。その中で幾つか訪れてみたのですが個人的にどれも外れなく大変満足でした。これからも参考にさせて頂きます。

活気のある店。職場の、士気に、溢れています。
ここ、よく行ってました。 安いし大盛りだし、焼きそばも美味しくて大人気だった。 フカヒレスープ8人前頼んだら、とんでもないって言われて、「2人前で充分ですよ」。 その通りでした。懐かしいなあ。難波にもある頃よく仕事帰りに行きました。
仕込みの時は寡黙に阿吽の呼吸で仕込みをして下さって、いざ営業開始となると活気有る声掛けで連携を取って下さっているんですね。 調理の様子も「お客さんに届けよう」っていう想いを感じさせて頂けるようで拝見しながら、改めて有難いなぁって思いました。 仕事柄、ご高齢の方々と関わる事が多いのですが、「戦時中、食料の無い時代は、どこに行くのか農家は作ったお米を国に売って、お金が有っても食料は売って貰えなくて、配給制だったよ。」みたいな話を聞くし、今の時代はこうして有難い事にお客さんの事を想って調理して下さる方が居て、物価高はありますが食事をさせて頂ける事に感謝したいです。 なんか泣けてきそうです。 今、日本国内に食べる事で困ってらっしゃる方が居ない事を祈ります。
so nice to see all of the workers share lunch together, eating the same food. reminds everyone is part of this team.

Finally! Someone who understands that each egg needs to be cracked and checked before adding to the others. One bad egg can ruin the whole batch. It's not that much effort to do it properly. Kudos!

Another method that poultry farmers do, is to shine a light under the egg. You can also use your phone's torch feature to see if it's still okay for consumption (if light shines through the egg and the yolk itself is visible then it's good, if light doesn't glow the inside of the egg then you'll know it's a bad one).

@josephchristianruiz6581 , can't always depend on the farmers to do that. It is better to check during prepping, or the whole batch goes to waste.

上六の中華といえば、高級の百楽・天山閣だけど、庶民向けには南海飯店だよね。昼食時大鳳閣か南海飯店かでいつも悩んでいたなぁ。

These guys have serious skills. So calm. Not like American kitchens where there's stress n lots of yelling at each other. I was a waitress in my young years at a high end resturant. The chefs yelled at us and everyone else constantly.

Family run they are all united as one with great organisation so no need to stress, preparations done from very early in the morning all done by hand. Yet those US mainly prepped in factories still stress when cooking or serving poor waiters get it from chefs and customers I’ve done in my youth, yet at catering college we never had that stress when cooking for hundreds.

南海飯店は百楽の近くにあった頃は、よく連れて行って貰ったり会の集まりで行ったなー。
昔 バラック小屋で営業されていて 週刊誌にも取り上げられてた 55年前高校生の時に行った 餃子は今の倍近くあった ライスと餃子一人前で腹いっぱいになった 会社員の人たちも大勢押し寄せてた チャーハンは百楽と変わらないぐらい当時はおいしかった 餃子と言えば南海飯店でした
サムネで南海飯店かと思ったら南海飯店だったwめちゃ地元w ハイハイタウンの半地下の店で元は近所で自前のビルで営業してました 大衆町中華とは言うものの以前は披露宴もできるような本格中華だったんだけどね。

Poor hygiene.. handled cooked food with bare hands..no gloves, no tongs used.
Garlic, onions, cabbage, pork... Who could ask for anything more? 🤗
