The tornado one is so deceptively hard to master, but once you do, if you like eggs the way people like steak (i.e. there’s a right doneness and everything else is preferential and wrong lol), it’s the best at delivering the two textures and everything in between. So damn good.

Yeah. Sadly people don't know how to properly cook an omelette. But you know what is scarier, cooking them in front of a group of people. I have to do it every weekend and been doing for a very long time. Still nervous. And why it's hard to get a replacement person. The thing is it's not just a Skill, it's the Equipment and the Eggs that make all the difference and even how you whisk them. Hell, I use a Chinacap to get the eggs whisked just right and it removes the Chalaza. But I'm also cracking 15 dozen eggs to start with.

It doesn’t take that long to learn it. The first one takes a little longer. This is something you have to do with confidence. Being too delicate can ruin the way you flip the eggs. The second spiral egg is just finding the right temperature to the right speed of the twist. After one busy day you can master both.

It doesn’t take that long to learn it. The first one takes a little longer. This is something you have to do with confidence. Being too delicate can ruin the way you flip the eggs. The second spiral egg is just finding the right temperature to the right speed of the twist. After one busy day you can master both.
