Amatriciana, Classic Roman Pasta | Giada De Laurentiis
Pasta all'Amatriciana is one of the quintessential pasta dishes of Rome. In Rome, the meat of choice would be guanciale - aka, cured pork cheek - but since that's not as attainable here, I usually opt for pancetta or even bacon. It gives the sauce so much rich, savory flavor - people will be asking "how is this tomato sauce so good?"

Pancetta is fine if you can’t find guanciale but this dish doesn’t have garlic or onion.

When I was an undergrad at UCLA, I helped a postdoctoral fellow from Sicily get his H1 Visa to work @ UCLA School of Medicine. He taught me how to make carbonara with eggs, bacon and mushrooms. Best pasta I ever had.

There's no garlic and onions in the amatriciana, the official recipe requires guanciale... Not pancetta, that's good for a boscaiola@@Giadzy

@@Giadzy classic and original Amatriciana is from Amatrice and people there don't use ONIONS and garlic. Pancetta is forgiveable but onions and garlic? Also, you forgot about white wine.

No oil, no pancetta, use guanciale which makes it's own fat sauce so it won't burn, no onion, no garlic, use pelati not passata, use suitable pasta like spaghetti or Bucatini and it's not just 'cheese' it's pecorino romano.

Garlic, ok, yet whole and in the sauce whilst cooking, then remove it. But onions - never ever. And the cheese looked more like sand than cheese. Pancetta can be used as a substitute for guanciale, yet the pieces should be bigger - not approved

Giada was literally born in Rome.
Giada....don't Americanize it. Amatriciana has only guanciale, tomatoes, pasta, and pecorino. No garlic, onions, or olive oil ever! It relies on the flavor and fat of the guanciale.
