On question 7, basically you should know that potable water is not included in empty weight but hydraulic fluid isn’t ?

Hydraulic fluid is part of empty weight because the aircraft needs it to function. But water is NOT PART OF THE EMPTY WEIGHT

There is no reason to have the datum where manufacturers put it. Put it in front the airplane, like the tip of the spinner or three feet in front of the spinner. Then all figures are positive. I've done this many times for real, like prior to first flight of an experimental airplane. Measure from the datum to the nose wheel or tailwheel and to the main wheels. Weigh the airplane in a level flight attitude. Of course this requires scales.
