Air Still Pro: Making Whiskey, Gin and White Rum with Still Spirits Flavours at 40% ABV - • Air Still Pro: Making ... .
Hey folks, in this film I'll be using an Air Still Pro loaned to me by bewathome.shop to distill a tomato paste wash and from that make whiskey, gin and white rum. I had initially set out to just make white rum, not realising that I had three different flavour syrups from Still Spirits.
In the film I do two runs in the Air Still Pro, firstly a stripping run and then a spirit run. I remove the heads and the foreshots and then flavour the spirits before bottling them and adding a little vegetable glycerine to smooth out the flavour.
Upon opening and tasting, I'm not overly keen on the spirits, the whisky tastes quite harsh and cheap, as does the gin, the white rum is a little better, but all of them are only drinkable to me with a mixer added.
After using these flavours, I can say that I probably wouldn't use them again.

I forget where I read/saw this: when it comes to hydrometers, if you have one, you have none. If you have two, you have two. (a fun corollary of Murphy's Law). This generally applies to any glass measuring device! I've messed around with SS (and other brands) flavor packs. Generally unimpressed, but I like my flavored spirits neat or on ice. So in a cocktail, they'll work okay-ish. With all that neutral stock, you can mess around with all sorts of recipes: lemoncello, fruit infusions of all types, and you can make your own gin with just 3 simple ingredients -- check out Odin's EZ gin on HD website. Absolutely delightful! You can either drink it with the botanicals coloring, or redistill for a clear spirit.

Thanks for the advice, I do make all kinds of spirits from the neutral output, I haven't heard of Odin's EZ gin before though, so I'll have a look for that. Cheers!

As always, another nice video. I have used the flavorings with mixed results. Some I like, others I don't. None are great neat. When mixed most are okay. Considering the cost to make these we would be fooling ourselves to expect a fantastic comparison to the real thing. Sugar/TP wash is fast, simple, cheap and the ingredients are always available. I prefer flavoring syrups like English Toffee, Irish Cream and Bourbon Caramel rather than the spirit flavorings. I look forward to your next adventure.

Hi Jean, wise words and I agree, I haven't tried the toffee, cream or caramel flavours, but they do sound very nice, I may have to experiment for this Winter's liquers! Cheers.

Like this very much, very honest. My wife is very susceptible to that sugerwash/methanolic taste, as you describe it. I have found that leaving it to breath and putting my still spirts carbon filter in the jug, I have a wide mouth 4L swing top jug, and leaving it for a week to breath and then capping it and leaving it for a month, completely gets rid of that taste. As I said I do leave my spirits in a swing top 4L glass jar that does not seal 100% so that can make a difference. One of these jars has been standing with 89% abv neutral for 5 months and is now 87% if that helps. As for the flavorings, I have spoken to many a distiller in my community about flavorings and the answers have always been; "No they are terrible", to "They are awesome for a cheap mixing drink, and after a few you won't even know the difference", no in between answers. To me that is not a selling point. Have you considered making a small batch "safety" whiskey? Happy to share one of mine, work very well. I can say I have tried only one of the still spirits flavorings and absolutely loved it, their cream base baileys whisky flavor was worth if, as for the other flavorings I have only word of mouth. Keep up the good work love the content.

Thanks for the comment, I totally agree with the ageing and filering, and in fact I triple filtered the gin that i've just tried and left it much longer and it is really not bad at all. The film for that one will be up in July. I've never really considered doing a small batch, it sounds like a sensible idea though. Cheers mate!

@@MossHomeandGarden looking forward to that film. Try a small batch. That's how I got started and you can't go wrong, as long as you have done your research, which is clearly not a problem for you. But start off with a safety whiskey. I see you mentioned Jessy form still it in another comment. That's where I got the idea and it has brought me full curcle. Even in an airstill. Alot more work but stil do able. Especially when you consider that whiskey needs triple distillation on copper. Something that can be easily done in an airstill. That would be a very interesting film as I can't find something like a full grain to half full grain whiskey distillation in an airstill anywhere on YT. Give it a go. Would love to see your take on it

Hey, love the videos. I've recently picked up an Air still and have my first TPW brewing away. Been doing a lot of reading and people seem to suggest collecting in 100ml batches in jam jars for the spirit runs, leaving these to air 24-48hrs and then tasting to figure out which parts contain the heads, hearts and tails. In theory if you did this and were selective on the cuts, you could cut down the harsh taste in the end product? Likely to get a lot less end product but with a smoother finish. Have you ever thought about making a rum from scratch using a molasses wash? Might be an interesting video idea (and maybe molasses could mellow or hide harsh tastes?)

Hello, thanks for the comment and I'm glad that you like the films. Yes what you have said is correct, particularly if you are pot stilling. Those with a better nose than me often do this, I've had a go a couple of times but am still learning as I do it. Hope that helps! As for a molasses wash, yes it would be good, but it costs a fortune in the UK so wouldn't be very economical. I'd like to try tapping a silver birch tree to do this.

@@MossHomeandGarden If you haven't checked it, the home distiller forum has a lot of great reading materials for the basics, been really useful for me. NAF Horse molasses goes for around £10 for 5L which isn't too bad and should be safe for human consumption after the distilling process - I think it is also sulphite free which should mean a nicer tasting end product. Paying £4 for a 500g jar would add up for a large rum batch! Tapping a birch tree sounds interesting - would love to see a video on this!

@@Yyunm The horse molasses is something that I've never heard of, has anyone in the brewing forums used it? It's certainly worth considering at that price, but I'm still a teeny bit concerned about it being food safe enough...although yes distillation should solve that. I'm going to find a suitable birch tree out of the way for next Spring (that's when to do it).

try the stripping run in pot mode, its twice as fast as reflux, then do the spirit run in reflux, a bit of butter or oil will act as an antifoaming agent. your not smelling methanol as its only produced when you brew pectin, but you are smelling acetone and other nasty fusil alcohols, heads could be 50mls or 350mls there is no "set amount" to remove, heads are sharp and acidic and smell like acetone, the small carbon filter is totally pointless, just leave the spirit open to the air overnight and alot of the more volatile esters will gas off
