A 40°F indoor coil is perfect. It accounts for unforeseen contingencies, such as dirty air filters, leaky ductwork, etc.

I Want to put my own 240v timer on an AC. Do you think the constant hard power on off daily cycle will stress the power supply or compressor? Or circuitry will handle the too often spiking.

I had to argue this with my boss I think somebody told him that running a gas heater with dehumidify unfortunately he didn't understand

Huh? Did you mean to say that running a gas heater will CAUSE dehumidification? Or were you trying to say that someone told him that he needs to run a gas heater WITH a dehumidifier?... 🤔 Your question doesn't make sense grammatically... Nonetheless, if you look at a psychometric chart, increasing the dry bulb temperature will DECREASE humidity, while lowering the dry bulb temperature will INCREASE humidity. In other words, operating a furnace - gas or electric - will DECREASE the humidity within a conditioned space, because you are increasing the dry bulb temperature.
