AIP Flatbread Recipe - Make Wraps and Sandwiches!

Today I'm sharing a versatile Autoimmune Paleo Protocol ( AIP Diet ) Flatbread recipe that you can use to make wraps, sandwiches, use as tortillas, or just use as a side like naan.
I give two different versions - using either cassava four or tigernut flour, so you have options.

    I figured out the gummy issue. It is not the brand we were using. Basically if you use a regular small pan it doesn’t allow moisture to escape and doesn’t cook evenly leaving you with a gummy pancake. I just purchased a pancake pan 10 inch in my case and came out perfect even though i used same ingredients.

    No it’s not it. It’s becomes gooey right away when it hits the pan.

    Mine became Gooey right away. I used a crepe pan and Antoni's Premium Cassava.

    These are great! I use a Tamagoyaki Japanese Omelette Pan. It makes a great rectangle bread, that I can cut in half to make a sandwich instead of rolling.

    Once again, super happy to have come back to this channel and found yet another great thing to prep. I have been all over the internet lately searching for AIP things I can just prep and easily throw together. I pretty much only ate paleo puffs today because I did not want to cook. Being able to make a quick wrap would change the game for me : )

    This is the first I have ever heard of the AIP diet. How happy I am that I have all the ingredients for this recipe. I've been looking for a yummy gluten free tortilla type roll up or flat bread that is not made of corn or rice and this fits the bill perfectly. I'm looking forward to watching your other videos!     Thanks so much for this!!! So quick and easy and it’s made AIP so much easier for me! I made it with arrow root and the texture was a bit sticky, almost like it wasn’t cooked so I had to cook it a lot longer and finished it off in the oven. Tasted fab though. I’ll try it with Tapioca flour next x

    I used to make the naan. I have been off the wagon lately and PAIN is making me hop on again quickly. I made this version using 2/3 of the cassava and 1/3 of the tigernut it came out Beautifully! Thank you xoxo

    I was on AIP diet year ago, and I came off of it. I think mostly because I didn't like any breads. I am back on diet and I tried your wrap recipe, right now I have tiger nut flour, I'll get cassava later w/subscribe and save from Amazon. Wrap came - excellent, I gave a friend to try, who is not on AIP and she liked it too. I only have couple lazy suggestions: I used potato musher with small holes to brake lamps in tiger nut flour. Also I used Bella Electric Ceramic Titanium Griddle, you can fit two large flatbreads at the same time. I just made (10) breads for my freezer in no time. Thank you very much for your recipes. I tried gyro as well and it is really good.

    I'm so excited! I made these for lunch and they're yummy! My coconut milk was quite a bit thicker than yours (with no thickeners or guar gum), so I used most of the can and had to add another 3/4 to 1 cup of water to get the right consistency. Then I had to make sure I didn't add too much batter to the pan, and that they were cooked really well through before I turned them over. (I'm high altitude so it didn't surprise me that I often had to cook longer than the 4 minutes.) I learned that they would bubble up at first, and I needed to wait for the bubbles to cook, and then most of the bubbles would deflate when they were cooked well enough to turn over. These ARE a game changer, thanks so much Michelle!

    Oh, I also had to spray my pan with avocado oil cooking spray before the first wrap so it wouldn't stick, but just once was enough.

    Thanks so much for sharing your experience! I only tried the Native Forest brand so good to know that a different brand might require some adjustment. I’ll make sure to include your notes in my blog post that I’m writing with the recipe tomorrow! Oh- did you use a nonstick pan? I’ve never needed to use oil but I’ll be sure to note that as well.

    @@MicheleSpring Yes, I did use a non-stick pan, but it hadn't been used in a long time and was not "seasoned" enough, if that makes sense. It perked right up when I sprayed it with a little oil. With the extra water, I did get more flatbread out of it, maybe 7-8. I don't know for sure because we kept eating them ;) . The brand I use is Golden Star coconut milk.

    I was not a chef, but I did a lot of baking. When I was diagnosed with Celiac and tried to make bread, I was always disappointed, and just stopped trying. I guess I have gotten used to eating GF. The odd textures have grown on me. It's been so many years that I have not had gluten, I've forgotten what it tasted like.

    I just made them, very good !! Any reason they are a bit sticky inside ? I cooked them for at least 3 mins per sides. Once they cool down they are very sticky like it's not cooked enough ?

    Hi there 🥰 I’m just wondering could I substitute tapioca/arrowroot flour/starch for coconut flour? I’ve been on AIP for like 3 years and I’m very allergic to a lot of things lol : only flours i tolerate is coconut and cassava. Can’t even have tigernuts! Thanks for your help 🥰💖

    @@MicheleSpring I tried them tonight! They do not like stainless steel pans, so I moved them over to my non stick griddle and they cooked up like a breeze. Make sure to cook them long enough or they'll get gummy. My first few needed to go back on the heat after the rest were done. They were fantastic, thanks again Michele!

    You know this did not work will for me, because the flat bread was gummy ish, but I realized that if I cut them into strips they can make a fairly nice flat noodle or pasta!. Just a a side note.

    @@larawedlund6787 mine as well. I wonder if it has something to do with the consistency of the coconut mil. I had to warm mine in a pan first because most of it was solid but I notice the coconut milk in video is already liquid. I'd appreciate any suggestions because I hate wasting the expensive cassava flour.

    Happened to me as well. My coconut milk was kept in the fridge and was solid at the top. Next time I will try to use a can kept at room temperature.

    Mine was gummy too. Even put it in air fryer still gummy. How do you make it work lol.

    So I tried this before reading comments. My grocery had Otto’s cassava flour. I used that and tapioca flour from red mill. So gummy. Even the oven tip didn’t help much. Tried again the next day using Caputo’s gf flour. (Not AIP compliant however. I am working up to being that committed 😜) this worked much better. Needed 1 1/2 cans Goya coconut milk and had to spend time breaking up clumps. 4 minutes per side and then in 350 oven for 15 minutes. Gummy ness is very minimal.

    If you are doing AIP, you'd need a grain and nut-free flour, so Bobs Red Mill GF 1 to 1 baking flour is not compliant.

    Do you potentially have any updates to get rid of the gumminess? I used the Anthony's Premium with Arrowroot and the simple coconut milk but they still came out gummy.

    I made this and loooooved it. I actually like the chewy-ness of the tapioca flour, but do you know (best guess) how much calories is in one? I easily sat and ate 3 of them lol.

    Thank you Michelle! Your videos are very helpfull. I'm starting to do this AIP protocol and one of the things that is forbidden is to eat starchy foods. So I was wondering if arrowroot powder, tapioca flour, Tigernut Flour and Cassava Flour are starch free?. I made a quick research and found that some of them might have starch. It is true?

    What version of AIP are you following (like who’s version?) The one I talk about is Autoimmune Paleo from Dr Sarah Ballantyne (The Paleo Mom) and starches are allowed. I mean, you don’t want to go crazy with them by any means as they can cause blood sugar imbalances amongst other things, but in moderation they are allowed. To answer your question though, all of those (with the exception of tigernut flour I think) are all pretty much starch. So if you are following a version of AIP that is starch-free then I would avoid them- though the tigernut flour is probably ok. (At least I think! 🤔)

    Thank you for this great video! Now I got confused: On Wikipedia I read that Tapioka is the starch made of Maniok which is another name for Cassava. So whats the difference? Is it the same plant but differntly processed??

    yep, same plant, different processing. The cassava root is made from peeling, drying, and grounding up the entire root and the tapioca starch is made from pulping and pressing the root - and only the dried starch left behind after evaporation is what is then ground into a powder.

    I tried this recipe in two different versions, cassava flour + arrowroot powder, and tigernut flour + Tapioca flour, the first one turned out great, but the second one didn't really look like a wrap :) The tapioca flour here in France (at least the one I could find) doen't look anything like yours, it actually doesn't even look like flour xD Anyway, those wraps are approximately half fat half carbs, if I'm not mistaken, and I would love to make other AIP recipes with cassava flower/Tigernut flower that would be low fat (I have a hard time with fat for some reason), do you know some other ones?

    When I make these they are gooey in the middle so I put them in the oven at 350 for 10-15 minutes flipping in the middle and that seems to get the gooey out.

    I haven't tried. You can certainly try, but you may need a bit more liquid as coconut flour acts a lot differently that any other flour.
