Ain't Nothing To It, But To Do It | Homestead Vlog | May 3, 2024
Today we are moving the cows, keeping the fence lines clean, potting up our extra blackberry vines, working on the disc mower, getting our Kentucky Wonders planted and cooking some delicious pork enchiladas!
Enchiladas
-4 cups cubed, cooked pork or chicken
-1 pint salsa
-2 cups chopped peppers of your choice
-Tortillas
-1 large can enchilada sauce
-Shredded cheese
Combine pork or chicken, salsa, and peppers. Add salt, pepper, and other seasonings of your choice to taste. Allow to simmer until most of the liquid is cooked out. Add 1/2-3/4 cup of meat mixture to tortillas, roll up and lay in 9x13 pan. Paint tops with melted butter. Place in 350 degree oven until tops are crispy, around 10-15 minutes. Remove from oven, add enchilada sauce and as much shredded cheese as you'd like. Place back into oven, cook until cheese is melted and bubbly, around 15ish minutes. Then enjoy!

Mowing after taking stock off of a pasture is a win win situation it promotes new growth and the grass that is cut down serves as fertilize and seed for the ground kind of like a cover crop.
You just have to love how the kids never complain about doing anything when it comes to helping out on the farm. It seems they enjoy everything they’re doing and actually want to get involved. This is how every child should be. Their work ethic is amazing

most of the time they're right under our heals wanting to know what they can help us do
I'm 75. I don't eat fast food anymore. I don't eat processed meals. If I don't cook it I don't eat it. 😂 I love enchiladas. Here's how I make my sauce. Great Value brand at Walmart. 1/14.5 ounce can taco salsa 1/ 15 ounce can tomato sauce ½ teaspoon onion powder 1 tablespoon of smoked paprika Mix well and pour over enchiladas.

Yum !!! Fast food kill ya I eat from my kitchen corn bread soup beans. Taters just good food God bless
When my grass goes to seed and gets mowed, it seems to grow back thicker and faster especially after the rain
Raise them up right cause “children are a heritage from the Lord” (Psalm 127:3).
Megan and Andy. I want to compliment you guys on the way you are raising your children. The two of you have your kids learning new things by teaching thru experience. My niece and husband are teaching their 6 yr old the same way. I see people on their phones and have their little ones sitting in front of a game ,TV or their own phone using it as the Convenient Babysitter.
Andy, I think your correct, mow behind the cows on high settings, weed seeds will fall and reseed❤
We also call our basement pantry the grocery store!
LOVE that idea to high mow the field!
I always "top" behind the cattle. Its cut down a lot on weeds for us, especially pigweed.
It's funny, I trimmed my neighbors tree's this morning that were hanging over my fence.
Really enjoying the old timey music added into the videos
Blackberry’s are everywhere here in Oregon.. we let them grow and prune them they make a great barrier or type of boarder, they can and will get outta control🤗
Have you ever taken your canned pork and made what we call tenderloin gravy? It's my favorite! Just dump the pork and "juice grease" into the pan. Get the pork hot and the grease melted. Remove the pork and make your gravy, then add the pork back in. I rough chop the pork if it's really big chunks. Pour over some biscuits and eat like a king..lol. Hope ya'll have a great weekend. I think we are getting rain off and on over the next several days. That will make everything grow. Ya'll take care and God bless.

Oh yes!! I love it that way as well!
Yes that would help the grass grow.
GARDENING FOR BEGINNERS Peas don't like too much water Potatoes don't like tomatoes Potatoes don't like cucumbers Potatoes and cabbage are friends Do not plant peas or beans with onions or beets Beans love carrots Beets love onion, cabbage, potatoes Tomatoes love carrots, peas Cabbage does not like radishes Carrots and onions do well together Marigolds can help repel pests Looking forward to seeing your gardens flourish and grow Much love from Vancouver, BC Canada 🌻🌻🌻 I posted this because I heard Andy say, he's gonna plant tomatoes and potatoes together, it's not a good idea. With competition for nutrients and airflow, both are susceptible to pests and diseases. Cross contamination can yield to reduced crop yield and quality

Thanks for sharing, I guess we're going to fine out, I got taters beside tomatoes
Cutting down a pasture is a good idea, not only does it knock the tall grass heads down but especially the weed heads. My Grandpa always followed grazing with a little seeding and then bush hogging.
You guys are the hard working people that I have ever seen, great video ❤️
Cutting grass promotes new growth.I’d say cut it on a high setting. Speaking of grass seed heads.when I was a kid one day I got the notion I was going to pick fescue seed heads for my Daddy to plant.I picked about a half a dish pan full. When he came home from work he said he didn’t need to plant right now. But we could feed them to the cows and believe me they will eat them!
Your land is beautiful! I’m enjoying your videos! We are moving south from Minnesota! Can’t wait!
Mow mow mow is how to get your grass to do better.
Hello to the Lawson family, we follow every video and enjoy each one. We have been living the same life style for many years. We are now 78 and 79 years old. We live in the lower piedmont of NC. Would love to live up your way. As far as mowing behind the cows, my husband says that is a great idea, keeps the weeds from going to seed. He does this also. God bless y’all richly.❤️

Hey will you ever do a episode on Canon your own pork. I would love to see how you do it. Can you can pork in a jar with an instant pots.
Loved your singing video!!! Hello from north Mississippi
I'll take a couple of the blackberry plants... Yes, I would bush hog the pasture fairly high. That's what I do for my donkeys to keep their eyes clear of the high stuff.
I'm thinking about doing some blackberry bushes now!! Better keep far from the pasture lol 😆
Once again, I must say that, aside from watching Meagan cook the wonderful and filling meals, I really enjoy watching your children. I would dare to say that both your son and daughter would, even at this young age, put most of the modern 'soy-boys and girls' to shame if this country suffers from any of the forecasted calamities. They both have questioning minds, and both like to learn and work what they are taught. I can only hope that more families teach their children the same things in the same way....and I hope, when the collapse happens (lol) that I live near you or them. LOL Thank You so much.
I love you daughter shadow! That was so me with me growing up on the farm! Plus your son putting pins in, mowing, learning responsibility and being a man. Doing it all together was priceless!
Miss Megan follow her daddy around like a little puppy!!!! I love watching your family ❤️ I have a back yard garage and strawberry patch. But I am retired and live in town now. Enjoy ❤ thank you
The folks next to us mows the pasture grass down like you are talking about and it seem to be better for the cows.
Made your enchiladas last night and the husband loved them, perfect quick meal for long days of farming. To anyone still hunting a big-bellied pot like Meagan's, I saw some at Home Goods.

On that pasture mowing, we never did it that I can recall. But as my ol' Dad used to say "you won't know unless you try it". Sounds like a good idea. Another way to boost grow is to put urea on the field with a cone spreader.
Northern Ohio, hear pouring downframe. It's a good morning to watch you with my coffee.Love you
Take a 275 or 330 gal tote cut plastic top and metal off, cut you access panel in one side put forks on tractor, use 2 in strap to secure to tractor forks, you have man basket for pole saw pruning. Yes, absolutely mow the filed at highest setting you will be amazed at what it does, I pull a homemade areator behind mower and WOW what a difference it makes. Stay safe, and God bless
It's awesome to see ya'll have the kids involved with the homestead. Teaching them to survive and continue the ole tradition.
Yes , cutting pastures will spur new growth and invigorate your pasture...
Enchiladas look delicious!
My wife makes/cans homemade verde green sauce that we use for enchiladas. It is made from green tomatoes and a couple other ingredients that I'm not sure of, but I will say, it is a family favorite and plus it uses those end of the year green tomatoes that we typically have an abundance of. If you're interested let me know and I can get her to send that recipe....once you eat the green sauce you won't want the red hahaha

Ohhh that sounds amazing!!
Hey buddy, my dad would take a sickle mower and set the draft high on the tractor and he would go over the pastures after the grass got high and seeded out.He called it clipping the grass, it made it easier for the cattle to graze and he said that it would help to prevent pinkeye. I am an old feller now and I really enjoy and appreciate your family sharing your life on the farm.Y’all do it like my family did as I grew up and the way I continue to do things, please keep up the good work.
YES! Mow the pasture after the livestock graze through. I always do this and it definitely helps improve the quality of the pasture.

I can remember my aunt planting Kentucky Wander green beans and she wouldn’t buy anything but white corn from the farmers market
Any left over pork chunks are sooo delicious mixed up in buttered up spaghetti noodles! The kids will love it 😁
There's my Family.... I'm gonna change my name..lol...I just love you all & how you live wish I was there with you all.i live in eastern north Carolina Thank you for sharing God Bless 🙏
Hi I was watching one of your videos and you mentioned the deer and other animals eat up some of your garden.. what we do is always plant a small garden for the animals and then the bigger ones for yourself but while your planting it talk to the seeds and to animals that this garden is for them.. we do it in our langue( Mohawk )and also burn tobacco and say a prayer The animals have to be fed too 😊
Love watching how hard working you all are❣It warms my heart to see your family working together no matter what you're doing. 🥰
We never tire of watching ya'll. Went to Pucketts greenhouse today for the first time. The girl there was very complimentary of ya'll. Also stopped at Halls. Thanks for mentioning Pucketts on a previous video, that's how we found out about them.

My husband does exactly what you described with mowing your pasture and it has worked wonders for our pasture field! Definitely do it!
Hi Megan, loved your video again,I’m gonna try the crisping of the enchilada they look great and seems like a good idea. A terrific sauce comes from (Rachel cooks with love( you tube) it’s made fresh or 2-3 days ahead. Not for canning but when I take the time it’s real good! She’s got good tips. Love watching Andy and the kids working and playing. We love our Kentucky beans. My husband is a KY boy:) he loves your channel and tells me about the old ways like you’re persevering! We appreciate you’al sharing.PS forgot to tell great video and interview with Breaking new roots!! Loved going around the property and hearing you retell stories!! You’re blessed!❤We’re in our 60s still growing veg like crazy, canning, freezing, drying whatever it takes. Keep it up!😊
It reminds me more of baked burrito casserole & enchiladas mixed.😊❤ looks delicious.
I just love watching you guys! Reminds me of our family. We didn't have animals, just huge gardens. Everything you've planted looks great. You keep your house and yard so nice and neat - love it!

Hi Danny from Mississippi I think you are on the right track I used to have my own lawn maintenance business and it makes sense to me.
Your weather is a lot different then in my neck of the woods. In SW Florida, the magic number is 4 inches. Anything below 4 inches will inhibit root growth. At least 4 inches above ground will provide enough nourishment to sustain and grow a healthy root system. The less green you have the smaller your root system. It's a balance.
Sure looks good, but we call them burritos in California. Enchiladas are made with corn tortillas, fill with shredded chicken, green onions and cheese, and cover with red enchilada sauce and shredded cheese. Bake at 350 degrees for 20 minutes. 😊
Becky front Acre Homestead and Rachel from That 1870s Homestead have recipes for enchilada sauce that are delicious!
Hi Andy, mowing your pasture up high works great, its something that we did every year but we used a bush hog instead of mower, you can cover a lot more ground and its not wearing out your lawn mower
Love watching!
Looking good around there. I hope the mowing after the cows fertilize and eat the paddock down works well for you Andy . The blackberries and their patches are doing great making them a little easier to pick really helps. Supper looked delicious. Stay safe and keep up the great videos. Fred.
3 tablespoon unsalted butter ▢2 tablespoon chili powder ▢1 teaspoon garlic powder ▢1 teaspoon onion powder ▢1 teaspoon ground cumin ▢3 tablespoon cornstarch ▢2 cups chicken stock ▢½ cup tomato sauce ▢2 teaspoon granulated sugar ▢½ teaspoon kosher salt I always add more cumin and chili powder . But feel free to add more or less of garlic and onion
Megan I learned from a Hispanic lady I worked with to actually dip the tortillas in enchilada sauce before filling and rolling, top with remaining sauce and cheese. Yours look yummy.😂😅❤
We love your videos!! We found yall a few days ago & watch every chance we can. Yall live on your farm the way we were both raised. Yall do such a good job! Keep em coming!!
My 5 Star ENCHILADA SAUCE // You’ll Never Want Another One ❤ by Rachel cooks with love ❤ Hi Meagan, I have made this sauce for some beef enchilada's, it is delicious and has a rich flavor a lot better than canned, which I have used also. But after making this I won't use can ever again. I hope you try this. Love watching you and Andy and your children taking care of your homestead and the animals. Those enchiladas looked delicious! 😊🥰
YES BLACKBERRIES WILL.TAKEOVER ALL!!!!! YOUR LAND. YES CEMENT AN AREA TO LIMIT SURPRISED SOMEONE HAD NOT WARNED YOU ALL. WONDER IF NEIGHBORS WANT SOME AND LET THEM COME AND DIG OUT AS MUCH AS THEY WANT HELPS YOU HELPS THEM
Hey guys and gals! I’ll come up and help y’all half a day just to eat one of Megan’s amazing looking meals !
When I make enchilada sauce I make it like I'm making gravy except use chicken stock and chili powder, cumin, garlic powder and onion powder and salt and pepper. Just adjust these seasonings to your taste.
Good Morning!
My gosh those look delicious
Andy go ahead and cut the top off the grass because the horses won’t eat it. They are only going after short close to the ground grass. That’s where the protein is.
Awesome video s. Beautiful animals
"Racheal cooks with Love" on youtube has a good recipe for enchalada sauce, more tex-mex style. If you are looking for mexican food done the way they do it in the San Antonio area, she is the one to follow.

Loved the outside stuff, and the inside food too. I have to fix those Enchiladas. I never think about it. It would be good to make your own sauce, only if you like it though.
Another great video! I made the Pioneer Woman's enchilada sauce, it was so good I could drink it! Lol! God bless y'all!
Your kids are adorable!😇!😇!😇!😇
Another great video! Enjoy them so much! Your Enchiladas look great.
Enchilada’s look soooo good!😋
Andy looks like he's hungry, your enchiladas look delicious. Love your videos.
Your choice would be top the grass a couple of weeks before the cows get in or like you say, chop and drop whats left as soon as theyre out. Only problem might he if your weeds are already seeding ..but hopefully you will beat most of them in time.
You freeze your peppers the same way I do the only problem is my freezer so full of frozen stuff only a small freezer I think maybe I should have canned them instead but that's for this winter I'll clean out the freezer and start canny stuff when I got more time I do everything like that hot dogs baloney because I don't eat all that much hot dogs so I put 6 in each bag baloney six slices in each bag and pull them out when I need them that way don't waste anything
Yeah, mow after cattle for a healthier pasture - those dagummed weed seeds dont need dispersal so get before the do - fyi, grasses have about a 4 day growth cycle - promote grass, hinder weeds - mower might get a little dirty under there from pies
You have a good idea you need to cut it down before the weeds head to seed and then fertilize with 13-13-13
Alright, looking good, I'm here with you guys. I just love your way of live. And we will be trying your pork rolls you cooked for dinner. Janet will love them ,I will to. I enjoy being with yall. Be safe and God bless. Lee family ❤
Taking care of your land by doing that.😀
Megan I do peppers and onions the same way I dice a lot and slice a bunch .flash freeze them then put in gallon bags.i had a man from stoffers tell me how to do that saves a lot of time when cooking
Northern ohio pouring rain watching you make enchiladas. Love loving your videos.
Great video. I have to say I definitely am loving y’all’s channel, I subscribed awhile back and just now realized I have been unsubscribed, KZread is sneaky about that. I have to say in the area of knowledge and teaching skills I have to say y’all’s channel is equal to Deep South Homestead, JTWES, McGie Homestead Adventures and a fella that past away a couple years ago Donald from Bayou Gardener. Keep doing what y’all doing. I don’t have much use for flashy Homestead Entertainers.

Intensive rotational grazing is a good way to manage your grasses, instead of mowing. Are you organic? If not , instead of investing in all the costs associated with mowing (diesel & labor), i usually spend the diesel money pulling a spray rig w Grazon in it. Grazon = 2-4-D One dose of spray is better than a dose of fertilizer. If the cows don’t eat the seed heads, they will propagate on their own.
Good idea!
Yumm I will fix some Saturday
heres a enchalada sauce Meagan Hamakua Homestead was watching this morning
Mommy and me love watching you alls channel.
YUMMY!!
Looks delicious😀
Thanks so much for showing the Enchilada recipe! Looks awesome, I'm sure gonna try it out!!! I'll do the chicken one, then I'm gonna try hamburger meat. I does mess with pork.(I miss bacon and ham and pulled pork. LOL!!!!!
Awesome
I LOVE HOW YOU TWO WORK SO GOOD TOGETHER, IT REMINDS ME OF HUBBY AND I YEARS AGO!!! AND THOSE BABIES ARE SO PRECIUS...
I mowed our pasture last year. It was very very dry last summer so if it was a typical rainfall year I probably wouldn't have been able to keep up with all of our other homestead chores. I am anxious to see how it looks this year with knocking the weeds back. Ball has an enchilada sauce recipe suitable for canning that I have used several times. The recipe is online, tried to add the link but it wouldn't work. I have also used a recipe from GimmeSomeOven , not sure if you have tried that one. Have a great weekend

Yes, if you knock the new seed heads off, the plant will take and put its energy into growing more lush and growing heavier roots.
Good job
I love the title of this video.
Hi y'all, from what I have heard, it is a very good idea to mow behind your cows. If you leave it the weeds will get ahead of the grasses and be able to take over. By mowing, the weeds will be knocked back and have to basically start over, giving the grass a chance to take over the weeds.
