Because Spain has this tradition whenever there's a festival that they will find a bull and a good and famous bull fighter and they will bet on who will win and whoever takes the other people's bets

Honestly, this movie has some flaws, but not many movies show bull fighting's reality. We usually see the bull run at the flag, and not the spears it's repeatedly stabbed with.
