It is more to Japanese menus of fine dining.
For those who do not know, most of these turtles are raised in farm. This is to avoid certain bacterias that exists in the wild and protect the consumer. So no or little hunting.

softshell turtle is NOT endangered, there's practically 2 or more in tiny ponds or for every couple hundred yards in canals in florida
