This is my grandmother's recipe for real Southern Style Cornbread cooked in a Cast Iron Skillet. It is so good with margarine for a meal or mixing it up in a cold glass of milk. Cornbread just has to be one of the best Southern Recipes.

    In the Deep South, we often fry 1 pound of bacon in the skillet first, and use the bacon drippings for oil, reserving some bacon drippings to smooth over top of batter before baking the cornbread in the skillet. This gives the cornbread a wonderful flavor and creates a crunchy crackling crust. Serve with some delish pole beans simmered with onions and salt pork. Yum!

    I made it yesterday, following all of your directions, and I heated the skillet THIRTY MINUTES in 450°. It is magnificent! You are THE Queen of real Southern cornbread!!!!

    She started out with 2tbsp when your a southern cook you eyeball everything for how you like it when you have made cornbread since you were a young teen you know what it looks like.... she added the extra oil so it would cover the skillet and have extra to go in the skillet

    Both of my parents and grandparents made and my parents still make cornbread as a staple - as do I! Each recipe varies from region to region and the varieties are endless as to what you can add or not add! This is exactly what many southerner's were raised on! Sugar wasn't included in ours but who is to say that is wrong? I love milk and cornbread too. My parents could and can do either milk or buttermilk, but I'm not a fan of buttermilk either - just in cooking! LOL. Well done - thanks for sharing.... keep home - cooked recipes and traditions alive.

    Thank you for making this video my mother passed when I was 19 and I never got a chance to learn her cornbread I only knew bits and pieces. The only thing different is she used butter in her iron skillet but I'm thrilled to have found this watching it brought tears to my eyes I'm going to make it today for my family. THANK YOU❤️

    My grand father loved corn bread crumbled in milk. I never have cared for it that way but I do love corn bread and still make it like your grand mother and mine.😊 Except I never use prepared mixes. Cornbread is so easy, I don't see the point of commercial mixes. Good to see that you don't ruin it by making it sweet and cake like.

    My daddy would crumble his cornbread in milk too but he loved it in a tall glass of cold buttermilk the best and yes momma would make soup beans and cornbread for dinner with chopped vidalia onion to go on top

    I recall when I was young my father would have cornbread, left from supper, in milk for a snack before bed. Kind of a replay of growing up in a tiny house with three brothers and their little mother. His dad had died. I have really gotten talkative tonight. Sorry, goodnight. God bless all. ❤

    Thank you, Debbie! It looks just like the one my mother in law gave me nearly 50 years ago. I just measured across with a ruler and my pan is 8 inches. Thank you so much for this video. I couldn’t remember her recipe exactly. (She’s been gone now for several years) when I made it there always was something missing. Your recipe was like watching her make it. I tried yours tonight ... the minute I tasted it I knew the missing ingredient was the buttermilk! It was amazing. It’s funny how food can take you back in time! Thank you again! Now I can pass it down to my children!

    My Mama always loved her some cornbread and buttermilk too! (I can't drink buttermilk either. Blech!) She never measures and she always pours her hot oil into her batter. Pretty much exact same recipe. Yours looks amazing! Side note- Margarine and canola oil are both really bad for you! Believe it or not, the old folks were right. We're back to butter and bacon grease!

    Well I use baccon🤔drippings if I'd oven-fried some of those pig parts for grease alone Except for the Bacon parts and wherever the Hams leave the body and that's all I know OR Want to know! Clear ? Thanks, Les

    My Mama was from Texas and she used this exact same recipe for cornbread. She didn't put the cast iron skillet in the oven though. She oiled the skillet and got it good and hot on the stove. She added oil to the batter at room temp, not hot. Then she poured the batter in the skillet with the fire set high and cooked it on the stove for a few minutes to get a nice thick and crispy crust on the bottom before putting it in the oven. Love it when it first comes out of the oven... can bearly touch it... burning your fingers cutting off the crust to butter it and eat it hot... just the best! Oh... and adding sugar makes it corn cake, not "cornbread" from my perspective.

    When I first saw the amount of oil going into the skillet - I thought it would be way too much, but then you incorporated most of it into the cornbread batter....It must make it deliciously soft on the inside but super crispy on the outside....drooling!!!     You not a southern if you dont put sugar in the corn bread. Most southern do this depend what part of the south you from. Sweet corn bread and butter milk.

    Flour??? No no no no no!!! REAL Southern cornbread doesn't use flour. White cornmeal (stone ground if possible), egg, butter, soda and full fat buttermilk. Also, use bacon fat in the skillet instead of canola. Thank you for not putting any damned sugar in it. I hate that stuff that folks call cornbread that is actually just glorified corn muffins/cake.

    I’m 6 th southern generation and the family recipe includes 1 cup flour and 1 cup cornmeal, no sugar. Her recipe is spot on.

    Sorry, but NO! No flour. Mine comes out just fine (no spoon needed). The eggs hold it together no problem. Oh, and I've lived on the Gulf Coast (yeah, that's pretty damned SOUTH) for over 60 years. Bless your heart. It's CORN bread, not corn/wheat bread. That's how my Grandmaw made it, my Mom made it and how they taught me how to make it. If you want to put wheat in your cornbread, go right ahead, won't bother me none. Won't call ya names over it either... have a fine day.

    Your recipe for cornbread is pretty much like my grandma's. Instead of the oil she ( and therefore I ) used bacon drippings in the cast iron skillet. And don't even think about making cornbread in anything but a black cast iron skillet! You cannot get the mahogany brown crust on the bottom and sides of the bred in anything other than that good old black cast iron skillet and no southerner worth his salt would ever serve anemic cornbread to polite society!!!

    When cream has been separated from the full fat milk, what is left is skimmed milk. The cream is churned and becomes butter. What is left is buttermilk.

    You make it exactly like I do! And you’re sooo right about it NOT being sweet! I use about that amount of oil as well and let it heat up in my cast iron skillet first- it will never stick when you do it that way. I’m making it for dinner this evening!     I agree with you...southern cornbread is not supposed to be sweet when you serve it with a meal like beans, etc. I also love to eat it with fresh milk (yummy!) This is a great recipe. Thank you!

    Being a city kid, I was used to cornbread being made a different way, especially without the addition of baking soda. One holiday some elder relatives came up from the south to dinner. My mother's great aunt asked "where is the cornbread"? Mom hadn't made any. I was twelve or so and I remember watching both my parents from time to time make their versions of cornbread I guess the way they had been taught. So, I attempted it and lo and behold, the was very little baking powder left in the house. So, just on instinct I added some baking soda to the mix. When It was done, I presented it to the table. My mother's great aunt looked at it and asked "did you use baking soda:? I replied yes ma'am. She laughed and said "now that is real southern style cornbread". At that point, visiting the south almost every summer, I had never had their version of cornbread. To me, that addition of baking soda was just out of necessity so that the bread would rise. But my were they pleased about what I had brought to that table. I did notice that the baking soda gives a stronger aroma than just the kind made with baking powder only. Great recipe and great vid.

    Ohhhh thank you, I'm so glad you like it. It's the only way I know how to make cornbread and yes the crust is so good. Now you have to try it in a cup of milk. Just mash your cornbread up in a big cup and pour cold milk over it and eat it with a spoon. Yum yum yum!!! Have a great week!!!!

    ...two tablespoons??🥺 My Arkansas born and bred parents and grandparents for that matter, probably didn't know what canola oil was; let alone cook with it. They kept a Cristo can on the back of the stove for collecting bacon and salt pork drippings. It aged like fine olive oil in that Cristo can and imparted the unforgettable taste, and velvety texture of my mother's cornbread, which I now prepare as well as my daughter.

    Sorry but we didn't use bacon grease in our cornbread. My grandmother would fry fat back and that was the grease she used but I haven't been able to find that for a long time. I can't imagine bacon grease in cornbread. Ugh!!! I don't think that is a southern way of making cornbread. Have a great week!!

    No sugar is the omly way!! Sweet cornbread is cake. What state is south to you? I was raised in East Tennessee. I wish I had seen your video before I made mine tonight.     Looks delicious, but should have let it rest a little longer so it wouldn't have crumbled. I want to jump through the screen and eat it now anyway. Yum, yum, yum. I have altered the recipe a little bit. I made a sweet, spicy and salty version via jalapenos and bacon. Yum.

    Good cornbread video, its like my mother-in-law makes. She calls hers sothern style also since it is not sweet. But both sides my family are from the south and they make it sweet. So not sure where it came from that the south did not sweeten their cornbread, but some of them did evedently. Thanks for posting I did enjoy it and I gave you the big thumbs up.

    +Texas Style Cuisine The North makes sweet cornbread all the time.Every southerner I know does not.sweet cornbread tastes like cake.I do not like cake with the meal.After is ok

    debbie greer you know Debbie I have heard that. Especially from my mother-in-law whos family is from Tennessee. My grandfathers family was from Alabama he was born in the 1899 and he ate sweet cornbread. Now his wife, my moms mom made sweet cornbread and she was a 1st generation immigrant from Germany. My other grand parents ate sweet cornbread also. Grandmas family history was Texas as far back as I know and he husband who was born in 1900 ate sweet cornbread and his family was from the south. Also if you look in the quartermaster cookbook has sugar in the recipe and it says to omit sugar for southern. I understand that must be the standard. But my family ate it sweet, but not as sweet as cake. My dad used to crumble up the left over cornbread into a glass and pour milk over it, ate it our of the glass with a spoon. I like sweet cornbread, but never turn down any kind cornbread sweet or unsweet, either way it is good stuff.     I put my skillet on the top of the stove. get skillet really hot. then put the oil in to get hot.

    What part of the south are you from? My grandpa is from Alabama, would this be similar? He said loved it as a kid with buttermilk.

    Yes!!! This would be the exact cornbread recipe that he would eat. It isn't sweet and it is amazing with pinto beans. Give it a try...he will love it. :)

    ThisWondrousWorld My grandfather ate his with buttermilk too! I like it with either milk. My grandmother made him what she called a "pone" of cornbread in her iron skillet every night. Real southern cornbread ain't got sugar in it! So glad to know others are carrying on these things!

    Hi and thank you for watching and commenting. I do the same thing with self rising corn meal as I do with regular. I still add Milk or Buttermilk, 1 egg, and the hot oil from my cast iron skillet. Cook it on 400 degrees until it is brown on top. Have a good week!!

    +Debbie FoodPrepping So I tried this with some twists. I don't use Canola or vegetable oils. I tried this with 100% extra virgin olive oil and it was terrible! Nice texture and flavor would have been good if it hadn't been for this horrible bitter taste. I think I burned the oil and should have cooked at a lower temp. Could I use butter, lower the temp, and still get the crispy crust?

    +31415926535equalspi Hi and thanks for trying. Extra Virgin Olive Oil and Butter have way to low of a smoking point to cook corn bread in. That means they will burn really quick and smoke bad in your oven or a frying pan. EVOO is used mainly for salad dressings and not for cooking. You could try regular olive oil. I really don't know any other way to cook it without canola oil, shortening, or vegetable oil. I know grape seed oil has a high smoke point. You could try that. I wish I could help you more but that's all I know about corn bread is canola, vegetable, or shortening. Have a great weekend and sorry I couldn't help you more.

    My cast iron skillet I think is an 8 inch. It could be 10 inch but it has a big 8 on the bottom so I think it's 8 inch. Thank you and have a great week!!

    I made this today and it was good but I guess I added too much baking soda. 1 table spoon is what you said (I think) did you mean 1 teaspoon? Gonna try it again with less baking soda! I have been longing for good southern cornbread without sugar. Sweet cornbread is good but there is something special and reminiscent about this kind!!

    I have never heard of adding vinguar to milk like that to make butter milk. Does it taste good? I love butter milk. I can't always find it where I live. Great video thanks for sharing.

    Thomas Tommy Thanks for watching and your question about the vinegar. It's a known fact that mixing vinegar with milk with sour it like buttermilk. I've never tasted it because I wouldn't drink buttermilk but it sure works when you don't have buttermilk for a recipe. Have a wonderful day!

    I gotta try your recipe for cornbread. I make it occasionally from scratch, but the recipe I have makes a lasagna pan size large cornbread and it has a tendency to dry out too quickly for 2 people to eat for a week. I can always make stuffing out of it when it gets dry. Yeah I do that buttermilk substitute also. My recipe calls for just regular milk. Does buttermilk make it moister? Also do you have recipe to make cornbread with a can of creamstyle corn? My hubby keeps buying the stuff and I don't like cream style corn. Maybe if I make it from scratch I would like it better. I hear if you add a tin of that corn though it makes cornbread moister with pieces of whole corn in it. My sister always calls me up to get this big cornbread recipe from me when she gotta feed a herd of people and she makes chilli, cornbread, salad and rice pudding for dessert. She got a herd of people staying at her house now. Daughter, son in law, 2 grand daughters and a grand daughters boyfriend. She sent the kids outside to sleep in tent overnight in her backyard.

    I usually use any oil that has no taste... vegetable oil, avocado oil, canola oil. Something like those. I've also used shortening which is what my grandmother used...I don't use it often though.

    California here, I heard that past the mason/dixon line the farther north the more sugar in the recipe pretty soon it ain't bread it's cake! Real corn bread doe not have sugar, my grandma made johnny cake that be another story...I really love your recipe and your how to you tube it was like it was sitting in a chair by your table thankyou

    i like warn to hot cornbread after i eat a meal i ll take the cornbread cumble it up put in a small med. size bowl pour cold buttermilk over the bread then eat it . it makes me feel not bloated no acid and just good i love this stuff.

    Caddi Rivera Thanks for your comment and you're right. It does look like a brand new cast iron skillet. That's how well my grandmother had it seasoned and I've tried to keep it that way and only use it for my cornbread. It's at least 75 years old now. Have a great day!!!
