Strange to hear him say that edge leading strokes don't form a burr. Any sharpener knows that's false. But it does yield a smaller burr and a better overall edge.

I was thinking the same thing... I often use edge trailing strokes to remove the bur.

@@carlantaya175 The burr forms from over sharpening one side of the bevel. It doesn't matter if you use edge leading or edge trailing strokes. The only way to NOT form a burr is alternate edge leading passes (constantly inspecting and feeling your edge) until you've properly apex'd both sides. But using alternating passes takes forever, and most people sharpen one side first, then the other, and eventually end in alternating passes to remove the burr. The burr lets you know when you've apex'd one side and you can switch to the other. But it does also mean you've oversharpened that edge (if you form a burr, you could have stopped sooner).

@@oceanwaves83 true if you form a burr you could've stopped sooner, but there really is no way to know you've apexed until a burr forms. And there is absolutely no harm in slightly over sharpening to where you form a burr

Anytime you abrade the steel edge you will create a burr if you move forward or backward. I do it all the time on my Japanese water stones and have to remove it using a variety of techniques ie: stropping, drawing the edge through a cork or a piece of heavy felt, or place the edge or my stone and lightly draw the blade across the stone laterally or through a piece of 2x4.

Drawing your fresh edge through wood or cork and running the burr all along this new apex is super counterproductive

Yes, you would want to sharpen straight razors backwards. By doing so however, you'll need to make sure to remove the wire edge as I explain in this video. Any more questions?

This dude sounds like he's bought a bunch of equipment, and never used it, you will get a bur (wire edge) no matter what direction the knife goes.

Wrong. A burr and a wire edge are not the same. A burr is a metal fold formed at the cutting edge on the opposite side of the grind. A wire edge is a continuous round wire of metal formed by the sharpening process. You can only create a wire edge by sharpening in a spine to edge direction. You cannot form a wire edge by sharpening in a edge to spine direction. Lastly, A.G. Russell knew more about knives and sharpening them than just about anyone.

@adkmtns5726 a burr Is a burr. There different categories of shape and sizes but it's a burr nonetheless you want to call it a wire edge a burr foil ect its still unwanted steel on the apex that needs to be removed. And you get this unwanted metal no matter what way you go...
