1 kg. Pork kasim
300g. Pork liver
Water, for boiling
Laurel leaves
Whole peppercorns
Salt
Oil, for sauteing
6 cloves Garlic, minced
¼ cup Onions, sliced
(Sliced pork)
⅓ cup Vinegar
½ cup Soy sauce
1 ½ cup Pineapple juice
2 cups Pork stock
¼ cup Liver spread
3 pcs. Laurel leaves
1 ½ cup Potato, sliced
1 cup Carrots, sliced
1 Tbsp. Sugar
(Pork livers)
¼ cup Red bell peppers, sliced
Black pepper to taste
1 cup Green peas
Slurry to thicken

the authentic ilocano igado has pork brain and green peas only with lots of onion. no soy sauce. suka at cornstarch with water lang.

Ilokano igado varies. My ilocano uncle uses calamansi and soy sauce with bell pepper and chopped pork liver & sliced kasim. My ilocana aunties uses manually chopped kasim with chopped liver with lots of onion
Igado is the recipe and dish we cook with Pork liver. In my provice Chef Tatung during fiesta, instead of potatoes the cooks use "bunga ng gabi/taro" and it's a spicy version.
