George Motz is on a quest to recreate one of the very first burgers in the world-the 121-year-old hamburger sandwich from the historic Louis' Lunch restaurant, a.k.a., the longest continually-operating hamburger restaurant in America. Using custom-built equipment and accurate cooking techniques, George will attempt to do what no Burger Scholar has done before and faithfully make one at home, for his fans. It's a crazy science experiment involving welding, engineering, and a bit of madness-all in the name of hamburger history!

    I'm watching this from New Haven Connecticut. Surprisingly I never had a Louis Lunch burger. I Recently bought Wahlburgers patties and omg yum. The meat was sooooo tender. Thankyou Donnie and Marky Mark

    There's no such thing, because they constantly flip the grilling grate so that each patty spends time in both the upper and lower positions, to ensure even cooking, due to the varying temperature gradient inherent in a vertical broiler. See @1:23

    WOW! what a great expansion and contuniation of Mr. Motz knowledge. His cooking videos are awesome, but the education and history of the origin of the foods is much better displayed through the spilt of the content. One side is similar to a tutorial, and the other is educational. Both are entertaining and more than worth the time to watch.

    For a re-tool of that vertical broiler, I'd find a certified oven repairman who can swap out the round heating elements for some rectangular ones. That would give you more even heat distribution within the cooking chamber.

    I love George and the history of Louie’s Lunch, but honestly this seems like a bad way of cooking a burger. The flames & heat want to go up, so it makes more sense to have a burger over a grill and just flip it. It also allows you to melt cheese over it, which you can’t do vertically.

    For burgers? Why? No char, can only use lean meat, can't add anything onto the burger while cooking it, like cheese, all of the minute amount of fat drips off the burger as it cooks. What's the benefit that makes it worthwhile over all of those downsides?

    Brilliant! Reminds me of an old A-frame toaster we used to have for our weekend house, already an anachronism in the mid-60s. Had to toast one side, then open it up and turn the bread to toast the other. Fun!

    According to the US National Museum, Library of Congress, the Danish immigrant Louis Lassen was the first to throw a hamburger over the counter. It happened in 1895 in the café Louis' Lunch in New Haven, where the Dane served steak between toast bread with either onion, tomato or cheese. Lars form Denmark 😁

    As a fabricator, I suggest not using that setup much. Those burners aren't designed to operate that way and will start burning paint or plastic parts. Those vapors will end up in your burgers or lungs. Just trying to keep your around longer, George. Thank you for the videos!

    Hey, I love Louis’ Lunch. I love it for the history, the purity, the schtick. But if I were going to do such a simple thing as a patty melt with salt, pepper, onion, Whiz and a tomato, I’d jack up the flavor of that patty. Brisket, shin, short rib- I sure wouldn’t do it with sirloin. Unless the sirloin has some dry aged stuff added. I had a Louis burger last week for the first time in a few years and wondered what I’d ever found tasty about them. It needs some damn UMAMI. They are pretty bland. But, like I said… hella cool.

    For any other cooking I would agree with you. But we are talking American style food and cooking. And let's face it ballpark nachos, philly cheese steak and Louie's hamburgers wouldn't be the same without processed cheese spread.

    processed cheese is not something evil, it really is made from real cheese made in the traditional way. it gets a bad reputation mostly because most people don't bother to do any research on the subject to see how it is really made, they just assume it's an artificial or fake product.

    Has the meaning of a steak sandwich changed over time? To me, a steak sandwich is just a steak served on a slice of bread that still necessitates a knife and fork. An interesting point of reference in the evolution of the hamburger, but it doesn't sound like they definitively put a hamburger steak/patty between two slices of bread and ate it with their hands.

    I'm pretty sure no one has attempted to recreate their cooking method because it's ridiculous and entirely unnecessary lol Also: Very lean meat and processed cheese spread on white toast. Gross lol

    In the 19th century, the eponymous minced meat apparently arrived in the USA via Hamburg with German emigrants. At the World's Fair in St. Louis in 1904, where this snack was first served, it was simply called Hamburg.

    Still in Germany we had Boulette or Frikadelle in a Brötchen earlier. Which basically is a Hamburger.
