I am in zone 5b/6a (Canada), and we have had the craziest 'el nino' winter here! We already have buds and blooms on things, and are direct sowing our cool crops earlier than ever. Can't wait to see what this season has in store for everyone :)
The leading plant supplier to the big box stores has gone crazy on their prices. Our area is $5.48 for the small pots. We're fortunate to have a farm store/ greenhouse where we can buy the 4 or 6 pk. starters for $2.29. If I have that option I'll take it over starting my own seedlings for many items. If I didn't, I'd certainly be doing it myself even if I dislike starting my own plants.

This Year for the first time i have start my own seeds ... its a big diference on the plants and the variety its crazy when we startour our own seeds 😁 for exemple this year i already have tomatos in my garden abd they are triving , only have to conver them for 4 days

some plants we'd never get in our garden shops, such as gynoecious or parthenocarpic species or kiwano, not even its seeds - just by internet order ! plants like kale are also interesting for its reproduction by seeds, so tey saw temselves even. Since a few years i use to harvest cabbage, salads & so on as you recommend: just their outer leaves.
another example = horseradish (armoracia): 2 roots cost 7€ +shipping, while 150 seeds cost 10,76€ incl. shipping

You could download the guide and then have a free PDF reader read it aloud. Is that what you mean?
