Well, I have no issue, with you not like Waldmeister. More for the rest of us, I guess. You can't really describe the Taste of Waldmeister aka woodruff, since it just taste as itself. Now your attempt to describe the taste is, lets say "off by a mile". So either you got a very bad version or your tastebuds just work differently. For everybody else: Don't be afraid, just give it a try.

They still are 😵 Semmelknödel are round like you'd expect a Knödel. Serviettenknödel are the same exact dough - just not shaped into a ball but rolled into a Serviette (I use Stoffwindeln at home). Benefit to that is you don't have to wait for the dough to cure, 'cause it can't fall apart inside the Serviette, and also you can fry the slices you cut down in butter before serving, which is SOOO good ❤

@@martinkasper197 Serviettenknödel (or, depending on the region, Serviettenklöße) have a long tradition in Thuringia, Upper Franconia and Hamburg. Austria, on the other hand, is strongly influenced by Bohemian cuisine, which also knows Serviettenknödel. So they're both a German and an Austrian thing, but they haven't played a significant role in Bavarian cuisine for that long. To my knowledge, it is not known exactly where they were invented.

If you make it in a cloth it's a serviettenknödel. If you just form a ball and put it into water (and like me hope it doesn't fall apart completely) you made a Semmelknödel. Both names are accurate and describe a slightly varied idea way on how to make them.

Yes like other people said, Waldmeister is something you know from your childhood. This sweet green syrup with the chemical taste. Did you go into the forest and found Waldmeister, rubbed it in your hand and smell? On the other hand the things with the rules I really don’t get. I think you have much more freedoms here. I will never forget the day I went to the swimming pool and I got an advice to follow the rules written on a sign: “swim clockwise”. Or in school there was a study hall hour: “no drinking, no eating, no leaving your seat, ….” Everywhere in the U.S. you meet an “advisor”. Asking the teacher to go to the restroom, getting a paper for being allowed to walk to restroom”….long time ago, but was a crazy experience.

Actually, fresh waldmeister leaves just smell like many other green plants when you rub them in your hands, kind of like grass. They only develop their well-known scent after wilting for a while, so letting them wilt is a must when preparing drinks or sweets from fresh waldmeister. Interestingly, some species of grass also contain the main aroma compound of waldmeister, and release it when wilting. So sometimes, fresh hay also has a slight waldmeister scent to it. Not enough to flavor any food with it, though.

For those not in the know, Waldmeister is 'sweet woodruff' (Galium odoratum) in English, a wild herbaceous plant with sweet-smelling leaves used in potpourri etc. However, the flavour used in Germany in foods and drinks is usually artificial as coumarin, which gives this scent and flavour to the plant, was found to be harmful for rats in the seventies. It can be used in limited quantities in drinks, but not in, say, candy and the like. (Correct me if I'm wrong.)

I have to admit that I can be truly irritable on my bike. I often tell myself "This time, just be relaxed, nice and forthcoming" - but after a few minutes, so-and-so many little things will have happened that tick me off. Pedestrians waddling in the biking lane, cars dashing out Einfahrten with no regard for anyone forcing you to slambreak, groups of slow riders that can't be passed (who, once you've overtaken them after all, will inevitably not wait behind the line at the next red light, get past and stop right in front of you, so you'll have to get past them all over again), teens sharing scooters finding it funny to go in serpentines, cars parking in the biking lane like that was what it's meant for - and as you have to swerve into the car lane to pass them, the car behind you will try to take you out ... and after ten of these type of incidents I've started boiling inside, so the eleventh person to cross me gets the "*@!%§!!" treatment - which is obviously an overreaction to what's probably a minor infringement, and I'm telling myself to do better - and the cycle starts again...

I think what annoys me most about people on bikes not following road laws is that there are almost no consequences for them. For car drivers you have speeding cameras and sometimes you see a police car pulling cars over. But for bicyclists you can technically, and very much practically, ride over a red light without anyone stopping you, unless there is that 1% chance that a police car is right behind you while you're doing it. There are fines for running a red light even for bicyclists, but they don't get caught on speeding cameras, and I've never seen one get pulled over by a police officer. On top of that I hate that I have partial fault when a bicyclist crashes into my car, but if I dare to come just a little too close to one of them, they yell at me or even slam their fist into my car. If I have to follow the rules and get consequences if not, they have too.

So I stopped having food with Waldmeister, avoiding it completely for years. A few years ago I tried a tiny little bit of ice cream with Waldmeister and it was really delicious. So, now, I'm consuming it but with cautious restraint. I have similar difficulties with ginger.

Semmelknoedel are also much easier to make from scratch and great way to use up stale breadrolls. I love them. AND if you have left overs, cut them in slices and fry them in a pan with real butter. Makes it even better. (that might not be a thing in Germany). Driving in Germany is a lot calmer than in other places and the roads are awesome. I get stressed driving in New Zealand. People hog the fast lane, like they're entitled.

I don't think we prefer the potato dumpling. This is simply the traditional standard for some dishes, such as the “raw” potato dumpling in "Rheinischen Sauerbraten". This is comparable to the fact that in the USA, hamburgers include fries and not potato salad. Potato dumplings come in roughly two forms, firstly made from already cooked potatoes or secondly made from grated, still raw potatoes. Semmelknödel (Bread dumplings), on the other hand, are a specialty of southern German, Austrian, South Tyrolean and Bohemian cuisine. They are an accompaniment to dishes such as roast pork, often served together with sauerkraut and/or red cabbage, Saurem Lüngerl (Austrian Beuschel), lentil dishes or mushrooms in a cream sauce. Overall, dumplings are very regional side dishes and are not equally represented throughout Germany. Semmelknödel (Bread dumplings) are traditionally on the menu in southern Germany, the Serviettenknödel (cooked in cloths) was largely only known in Thuringia and Upper Franconia as well as in the area around Hamburg until the 1930s. They are served with various dishes, especially with dishes rich in sauce, such as game goulash or braised meat, also with steamed fruit, modern e.g. with goulash with peppers as a vegetable. The cloths used (like whirlpool cloths, for example) are usually washed without the use of soap or detergents and are boiled and disinfected as boiled laundry or have to be washed so often until there is no longer any soap foam or smell in the wash water or cloth. The napkin dumpling was also considered a wedding dish in Thuringia and Upper Franconia for a long time. There are Grießklößchen (“semolina” dumplings) made from semolina, milk, eggs and butter. When prepared heartily, they are seasoned with nutmeg, lemon peel or sugar and cooked in broth as a filling soup addition or are also served gratinated. Sweetened semolina dumplings are also known as a dessert, seasoned with cinnamon and sugar, especially as an accompaniment to fruit sauces and compotes. In Germany side dishes mainly include potatoes in various forms, be it boiled, fried, deep-fried, mashed, mashed and deep-fried as croquettes, cold as a salad with bacon, vinegar and oil or with mayonnaise, or simply as dumplings; new varieties such as sweet potatoes are also becoming more and more popular. Furthermore, flour products such as noodles and spaetzle or dumplings (Semmel- and Serviettenknödel) are particularly common. Rice has been around for a while now and is also found in classic dishes like chicken fricasses. But the side dish doesn't just consist of potatoes. In fact, Germans love and eat a lot of cabbage, but there's a lot more to it than just fermenting white cabbage into sauerkraut. Delicious German cabbage varieties include wild cabbage/cliff cabbage (mainly a specialty on the island of Heligoland), white cabbage and pointed cabbage, red cabbage, savoy cabbage, cauliflower, broccoli, kale, Brussels sprouts and also kohlrabi. There are also foreign varieties such as Chinese cabbage / Pak Choi or Romanesco. They are boiled, steamed, served with sauces or even baked with cheese. Other common vegetables include peas, green beans, broad beans, white beans, leeks, carrots, turnips, parsnips, chard, pumpkin, rhubarb, celery and fennel, spinach, asparagus and tomatoes. From the neighboring countries there are zucchini, peppers and eggplants.

Serviettenknödel was cooked inside a very big napkin originally. The dough was put onto the napkin and the napkin was rolled up into a wurstlike shape and fixated before putting it into the water. Otherwise the dough would not become a Knödel but disolve into the water. We have both kinds when we have rouladen and the filled savory kind (Leberwurst) with cream sauce and bacon.

Guten Appetit !

I tend to think the main reason people tend to be in such a god-awful _hurry_ on the roads, in the US, is our persistent, pervasive tendency to _procrastinate._ There's something we _have_ to do, but we know it won't be _pleasant,_ so we put it off. We get distracted. We wait and wait and wait until we have to rush _through_ it. Most people don't _enjoy_ being in a rush about anything, so the act remains with an unflattering association, motivating us to _continue_ procrastinating whenever the responsibility in question rolls around, again. And then we tend to wonder why there's never enough _time_ in the day.

Yay for Semmelknödel! As a kid, I found Waldmeister to be pretty cool. But these days, I don't even remember what it tastes like. I guess you could say I have moved on from it. For ice cream, I'd rather have nuts and berries flvours. Got to agree with your stance on the Bavarian undertone of grumpiness. Sometimes, it's like these people all skipped their Zweites Frühstück.

Hayley, the main aroma compound of waldmeister ist coumarin. It is also found in many other aromatic plants, including various species of the cinnamon genus and the tonka bean. Escpecially the latter can have an extremely high content of coumarin, and people have been using the beans as a spice and in perfumery for a long time. When added to apple juice or wine, maybe together with a little bit of lemon, the drink actually comes close to waldmeister flavored drinks, in my opinion. It's not the same, of course, but similar. Licorice definitely has a coumarin flavor to it, yes, even though it is often overpowered by other flavors such as that of ansiseed or salmiak. However, I have never even thought of any of the other plants you mentioned as having a flavor similar to that of waldmeister. I mean, I really like waldmeister, and rotten cilantro is definitely not something I would want my food to taste like...

Waldmeister interests me - not too keen myself either - it's one of those old-fashioned ingredients that no-one else eats anymore (they used to eat it in the UK too and elsewhere in Europe). There are a lot of them - coming to Germany from the UK, I notice them because they are ingredients my grandmother or even great-grandmother would have used. I've heard of them because I read and learned to cook from my mother and grandmother but hardly ever saw them as a kid (though I do remember burdock, which is another one, and, of course, nettle, which has become more popular as a tea in recent years). The thing I like about it in Germany is this sense of eating something from the past because, basically, they've not given up what they regard in their pragmatic, stubborn way as perfectly good nutritious food whereas everyone else has found something more palatable. It's a bit like the Sundays here too - basically you get Sundays from the 1950s with everything, I mean *everything*, closed - not like anywhere else where Sunday opening is a thing and you can go and buy a litre of milk if you run out. Except for the bakerei, of course, which open at the crack of dawn and shut about 11am. At least you can get fresh bread of a Sunday morning. Wouldn't call Waldmeister disgusting though.

I personally like Knödel/Klöße in every way, shape or form but I can imagine what you mean with "worse consistency" talking about the Knödel you depicted (I personally like that aswell but I could see people not enjoying it) BUT could it be you just never found the right Kartoffelknödel for you? There is a wide array. Just from the top of my head, some that are different to the one in the video: Thüringer Klöße, Halb und Halb, Schlesische Knödel and Iam sure there are many more. They're all made from potatoe or atleast have potatoe as a main ingredient and are actually all very different taste and consistency wise. I was relieved when you said that you like Semmelknödel, anything else would be insanity. I get your dislike for Waldmeister (while I like it myself), maybe you have to have grown up with it. When you described that it tastes so different to you, I thought maybe it is a similar genetic thing, like many people have with cilantro (myself included). Don't know if there ever has been a study on this concerning Waldmeister

About bicycles and bicycle riders, there is a compound issue that needs to be unravelled, which boils down to energy expenditure and energy debt. Bicycle riders tend to have a preferred energy expenditure/ speed combination. They don't like to slow down because of the energy they have to expend in getting to their most comfortable expenditure regime again. Add to that the problem of differing speed pelotons. There are roughly three of those, the up to 15 km/h leasure riders taking their bikes out for a spin without much practise and not very comfortable on the bike, the 15-24 km/h commuters, who have things to do and use the bikes primarily for convenient transportation, and lastly the 24+km/h sports/ courier/ delivery group, that wants to maintain speed and know how to sustain it. These three very differing groups share the sidewalks+bike lanes with each other and pedestrians and the roads and possible bike lanes painted on the road with motorised transports. And the last two pelotons, especially the sports and professionals, hate to incur the energy debt that slowing down causes. That holds true for obstacles like pedestrians, cars parked in the way, road damage etc., they are increasingly irritating. There's a bit more to this, but that is the gist.

Waldmeister: Nowadays you almost never get Waldmeister. You will get a chemical mixture that tastes similar to Waldmeister. In the sense that Vanilla often is Vanillin, the chemical counter part. Kartoffelknödel are good, if they are made good. Making them good is a lot of hard work. Almost nobody makes them anymore the way they are supposed to be made. Most often you will get the industrial version. Here I agree with you, most often they are not really good. I am old enough to have experienced the real stuff. -- When I have the choice I prefer Semmelknödel. Serviettenknödel have their name from the preparation technique. The mixture is indeed enveloped in a napkin. The advantage is that they don't fall apart in the cooking process -- and they are not balls but more sausage-like. You can slice them and all slices have about the same diameter.
